Halloween Meringue Ghosts

Halloween Meringue Ghosts with swirled white peaks and chocolate-drawn smiling, winking, and surprised faces.
Halloween Meringue Ghosts are crisp vanilla treats with playful chocolate faces, perfect for adding a little sweetness to Halloween celebrations.

Halloween Meringue Ghosts bring a little spooky fun to the dessert table without making a mess of your kitchen. Each one starts with vanilla meringue, piped into playful swirls and baked until crisp and airy. A few tiny dots of melted chocolate turn them into wide-eyed, smiling, or pleasantly surprised little ghosts.

No food coloring or specialty candy eyes needed. The chocolate adds a lovely contrast to the delicate, sweet cookies, making them just as enjoyable to eat as they are to decorate.

Although meringues take their time in the oven, the hands-on work is surprisingly simple. They also keep beautifully in an airtight container, making them an excellent make-ahead Halloween treat.

Arrange them on a dessert platter, serve them alongside cupcakes, or add them to a festive cookie tray. Best of all, every little ghost can have its own personality!

Recipe Yield: 24 servings

INGREDIENTS

3 large egg whites, at room temperature
3/4 cup superfine sugar
1/4 tsp cream of tartar
1/8 tsp fine salt
1/2 tsp pure vanilla extract
2 tbsp semisweet or dark chocolate chips

INSTRUCTIONS

1. Prepare the Oven:
Preheat oven to 200°F and line a large baking sheet with parchment paper.

2. Whip the Egg Whites:
Beat egg whites in a clean, dry mixing bowl on medium speed until foamy, then add cream of tartar and salt and continue beating until soft peaks form.

3. Add Sugar and Vanilla:
Gradually add sugar, 1 tbsp at a time, while beating on medium-high speed until thick, glossy, and no longer grainy, then add vanilla and beat until stiff peaks hold.

4. Pipe the Ghosts:
Transfer meringue to a piping bag fitted with a 1/2-inch round tip and pipe 24 ghosts, about 1 1/2 inches wide and 2 inches tall, each with a rounded base, smaller swirl, and pointed top.

5. Bake Until Crisp:
Bake for 1 hour 45 minutes to 2 hours, then turn off the oven and leave the ghosts inside with the door closed for at least 2 hours, until completely cool, dry, and easy to lift from the parchment.

6. Melt the Chocolate:
Melt chocolate chips in a small microwave-safe bowl at 50% power in 15-second intervals, stirring between each until smooth.

7. Decorate the Faces:
Use a toothpick or small piping bag to draw tiny chocolate eyes and different expressions, including smiles, winks, and surprised mouths, then let the chocolate set completely.

Helpful Tips to Perfect This Recipe

  • Keep Everything Grease-Free: Even a trace of egg yolk or grease can prevent the whites from whipping properly. Separate eggs while cold, then let the whites reach room temperature before beating in a clean, dry bowl.
  • Dissolve the Sugar Completely: Superfine sugar creates a smoother, more stable meringue. Before piping, rub a little mixture between your fingers; it should feel smooth rather than gritty.
  • Create Beautiful Ghost Shapes: Hold the piping bag upright and use steady pressure for a rounded base. Gradually lift to form a smaller head, then release pressure and pull upward for a playful pointed tip.
  • Check for Complete Dryness: The cooled ghosts should feel light, dry, and lift easily from the parchment. If they remain sticky, return them to a 200°F oven for another 15–30 minutes, then let them cool in the turned-off oven.
  • Keep Them Crisp: Store completely cooled ghosts in an airtight container at room temperature for up to 1 week. Avoid refrigeration and humid conditions, which can make meringues sticky.
