INGREDIENTS

For the Shortbread Crust

1 3/4 cups all-purpose flour
1/2 cup powdered sugar
1/2 tsp fine salt
1 Tbsp finely grated lemon zest
3/4 cup unsalted butter, cold and cubed
3/4 tsp dried culinary lavender, lightly crushed

For the Lemon Lavender Filling

1 1/2 cups granulated sugar
3 Tbsp all-purpose flour
4 large eggs, room temperature
2/3 cup fresh lemon juice
1 Tbsp finely grated lemon zest
1/4 tsp dried culinary lavender, very finely crushed
1 Tbsp heavy cream
1/2 tsp vanilla extract
Pinch of salt

For Finishing

Powdered sugar, for dusting
Optional lemon zest curls or culinary lavender for garnish

INSTRUCTIONS

1. Prepare the baking pan:
Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on the sides for easy lifting later.

2. Make the shortbread crust:
In a large bowl, whisk flour, powdered sugar, salt, lemon zest, and lavender until evenly combined. Then cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs with small buttery pieces remaining throughout.

3. Press and bake the crust:
Firmly press the crust mixture evenly into the prepared pan, especially into the corners. Bake for 18–22 minutes until lightly golden around the edges and dry on top. Meanwhile, prepare the filling.

4. Prepare the lemon lavender filling:
In a separate bowl, whisk sugar and flour until fully combined. Then whisk in eggs, lemon juice, lemon zest, lavender, heavy cream, vanilla, and salt until smooth and silky. For the smoothest bakery-style texture, strain the filling through a fine mesh sieve before pouring.

5. Fill and bake:
Pour the filling over the warm crust. Carefully return the pan to the oven and bake for 20–24 minutes until the edges are set and the center has only a very slight soft wobble when gently shaken. Avoid overbaking, as the filling continues setting while cooling.

6. Cool and chill:
Allow the bars to cool completely at room temperature for about 1 hour. Then refrigerate for at least 2 hours, although overnight chilling creates the cleanest slices and richest flavor.

7. Slice and serve:
Lift the bars from the pan using the parchment overhang. Wipe the knife clean between cuts for neat slices. Dust generously with powdered sugar just before serving and garnish lightly if desired.
