1 1/2 lb boneless skinless chicken thighs, cut into 2-inch pieces
2 medium zucchini, sliced into 1/2-inch half-moons
1 1/2 cups cherry tomatoes, halved
1/2 small red onion, thinly sliced
1 cup shredded low-moisture mozzarella cheese
1/3 cup crumbled feta cheese
3 tbsp olive oil, divided
2 tbsp fresh lemon juice

1/2 tsp black pepper

INSTRUCTIONS

1. Preheat and prepare:
Preheat the oven to 425°F. Lightly oil a 9×13-inch baking dish.
