INGREDIENTS

2 cups all-purpose flour, spooned and leveled
1 cup full-fat cottage cheese
1 cup fresh blueberries, divided
2 large eggs
2/3 cup granulated sugar
1/3 cup unsalted butter, melted and cooled slightly
1 tbsp finely grated lemon zest, divided
2 tbsp fresh lemon juice
1 tsp vanilla extract
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp fine sea salt
1 tbsp granulated sugar, for topping
Nonstick baking spray, for the pans

INSTRUCTIONS

1. Preheat and prepare:
Preheat the oven to 375°F. Generously coat 36 mini muffin pan wells with baking spray.

2. Make the lemon sugar:
Rub the additional 1 tbsp sugar with 1 tsp lemon zest until fragrant and lightly moistened. Set aside.

3. Blend the wet ingredients:
Blend the cottage cheese, eggs, 2/3 cup sugar, butter, remaining lemon zest, lemon juice, and vanilla until smooth.

4. Combine the dry ingredients:
Whisk the flour, baking powder, baking soda, and salt in a large bowl.

5. Finish the batter:
Pour the cottage cheese mixture into the dry ingredients. Fold until a few flour streaks remain, then gently fold in 3/4 cup blueberries. The batter should be thick and scoopable.

6. Fill the pans:
Divide the batter among the prepared wells, filling each about three-quarters full. Top with the remaining blueberries and lemon sugar.

7. Bake until golden:
Bake for 13–16 minutes, until puffed and lightly golden. A toothpick inserted through plain crumb should emerge clean or with a few moist crumbs.

8. Cool and serve:
Cool in the pans for 8 minutes. Carefully loosen the edges, then transfer the bites to a wire rack.
