INSTRUCTIONS
1. Prepare the oven:

2. Partially cook the bacon:
Arrange the bacon in a single layer on one prepared sheet, using the second if needed. Bake for 5–6 minutes, until it begins releasing fat but remains pale and flexible. Transfer it to paper towels and gently blot. Replace any greasy parchment with a clean sheet.
3. Make the glaze:
Whisk the maple syrup, Dijon mustard, brown sugar, vinegar, smoked paprika, and black pepper until smooth. Transfer 1 tbsp to a separate clean bowl for finishing.

Unfold the cold puff pastry sheets. Gently roll over the seams without thinning the pastry. Cut each sheet into 6 long, equal strips.
