1 tbsp white balsamic vinegar
1 tsp honey
1/2 tsp finely grated lemon zest
1/4 tsp kosher salt
1/8 tsp black pepper
20 (4-inch) bamboo appetizer picks
INSTRUCTIONS
1. Dry the ingredients:
Pat the tomatoes, mozzarella, blueberries, and basil thoroughly dry with paper towels.
2. Make the dressing:
Whisk the olive oil, white balsamic vinegar, honey, lemon zest, salt, and black pepper until combined.
3. Season the mozzarella:
Toss the mozzarella with 1 tbsp of the dressing. Let it rest for 10 minutes, then lift it from any excess dressing.
4. Assemble the skewers:
Gently thread one blueberry, one tomato, one folded basil leaf, one mozzarella ball, and another blueberry onto each pick. Use a slight twisting motion when piercing the blueberries so they do not split.
5. Arrange and chill:
Place the skewers horizontally on a serving platter. Serve immediately or cover loosely and refrigerate for up to 2 hours.
6. Finish and serve:
Whisk the remaining dressing again, then drizzle only enough over the skewers to lightly gloss them. Serve chilled or slightly cool.
