INSTRUCTIONS
1. Make the citrus dressing:
Whisk the orange juice, olive oil, lemon juice, honey, orange zest, Dijon, ginger, salt, and pepper in a large bowl until combined.
2. Coat the apple:
Add the apple matchsticks immediately and toss thoroughly to coat them in the citrus dressing.

Add the carrots, cranberries, parsley, and scallions. Toss until everything is evenly dressed.
4. Rest and season:
