INGREDIENTS

12 oz sturdy restaurant-style tortilla chips
2 cups fresh pineapple, cut into thick spears or slices
2 1/2 cups shredded cooked chicken
1/2 cup thick, tangy BBQ sauce
2 cups freshly shredded Monterey Jack cheese
1 cup freshly shredded sharp cheddar cheese
1/3 cup thinly sliced red onion
1 small jalapeño, thinly sliced
1/3 cup sour cream
1 tbsp fresh lime juice
1 tsp olive oil
1/4 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp garlic powder
1–2 tbsp water
1/8 tsp kosher salt
2 tbsp BBQ sauce, for finishing
1/3 cup chopped fresh cilantro
1 lime, cut into wedges

INSTRUCTIONS

1. Grill the pineapple:
Heat an outdoor grill or grill pan over medium-high heat. Pat pineapple dry, then toss with olive oil and chili powder. Grill for 2–3 minutes per side until lightly charred. Cool slightly, then chop into bite-size pieces.

2. Prepare the chicken:
Meanwhile, toss the cooked chicken with 1/2 cup BBQ sauce, smoked paprika, and garlic powder until evenly coated.

3. Layer the nachos:
Preheat oven to 400°F. Combine both cheeses. Spread half the tortilla chips over a large rimmed baking sheet. Top with 1 cup cheese, then half the chicken, pineapple, red onion, and jalapeño. Add remaining chips, another 1 cup cheese, remaining toppings, and finish with remaining cheese.

4. Bake until melted:
Bake for 10–12 minutes, until the cheese is fully melted and the chips are lightly toasted around the edges.

5. Finish and serve:
Whisk sour cream, lime juice, 1 tbsp water, and salt until smooth, adding more water if needed. Drizzle over the hot nachos with the remaining BBQ sauce. Finish with cilantro and serve immediately with lime wedges.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Choose sturdy tortilla chips: Thin chips can collapse beneath the chicken, pineapple, and cheese. Restaurant-style chips give these loaded nachos a much better crunch.
  • Remove excess pineapple moisture: Pat the pineapple dry before grilling and let it develop good char. This concentrates the flavor and helps protect the chips from excess moisture.
  • Shred the cheese fresh: Monterey Jack gives the nachos a smooth, stretchy melt while sharp cheddar adds deeper flavor. Freshly shredded cheese produces the best finish.
  • Add the sauces at the very end: Drizzle the lime crema and finishing BBQ sauce just before serving. This keeps the contrast between crisp chips, melted cheese, and cool toppings intact.
