INGREDIENTS

Salad:
6 cups baby spinach
2 cups baby arugula
1 1/2 cups fresh strawberries, quartered
1 cup fresh blueberries
1 cup fresh blackberries
1/2 English cucumber, halved and thinly sliced
1 medium firm-ripe avocado, cubed
1/4 cup thinly sliced red onion
4 oz goat cheese, crumbled
2 tbsp chopped fresh mint

Maple pistachio-pepita crunch:
1/3 cup raw unsalted shelled pistachios, roughly chopped
1/4 cup raw unsalted pepitas
1 tbsp pure maple syrup
1/8 tsp fine salt
1 small pinch cayenne pepper

Creamy citrus poppy seed dressing:
1/3 cup plain Greek yogurt, 2% or whole milk
3 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
2 tbsp fresh orange juice
1 1/2 tbsp honey
1 tsp Dijon mustard
1 tsp poppy seeds
1/4 tsp fine salt, plus more to taste
1/8 tsp freshly ground black pepper
1–2 tbsp cold water, as needed

INSTRUCTIONS

1. Soften the onion:
Place the sliced onion in cold water for 10 minutes. Then, drain and pat it thoroughly dry.

2. Make the dressing:
Whisk the yogurt, olive oil, lemon juice, orange juice, honey, Dijon, poppy seeds, salt, and pepper until smooth. Add water gradually until pourable.

3. Toast the crunch:
Toast the pistachios and pepitas in a dry skillet over medium-low heat for 2–3 minutes, stirring frequently.

4. Caramelize and cool:
Add the maple syrup, salt, and cayenne. Stir for 1–2 minutes until bubbling and evenly coated. Spread onto parchment, cool completely, and break into clusters.

5. Dress the greens:
Toss the spinach, arugula, cucumber, and drained onion with about half the dressing.

6. Finish the salad:
Gently fold in the berries and mint. Top with avocado, goat cheese, and crunchy clusters. Drizzle with additional dressing and serve immediately.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Dry everything thoroughly: Water left on the greens or berries dilutes the dressing and prevents it from coating the salad properly.
  • Choose firm, ripe fruit: Soft berries and overripe avocado can break while assembling. Firm-ripe produce keeps the salad fresh and beautiful.
  • Watch the maple crunch closely: Remove it once the syrup bubbles and clings to the nuts. It becomes crisp only after cooling completely.
