Recipe Yield: 10 samosas

INGREDIENTS

10 samosa pastry sheets or spring roll wrappers
2 medium Yukon gold potatoes, peeled and diced small
3/4 cup frozen peas
1 tbsp olive oil
1/2 small yellow onion, finely diced
2 garlic cloves, minced
2 tsp fresh ginger, grated
1 tsp curry powder
3/4 tsp ground cumin
1/2 tsp garam masala
1/4 tsp turmeric
1/4 tsp smoked paprika
1/4 tsp crushed red pepper flakes (optional)
3/4 tsp salt, or to taste
1/4 tsp black pepper
2 tbsp chopped fresh cilantro
1 tsp lemon juice
1 tbsp butter
1 tbsp flour
2 tbsp water
1–2 tbsp olive oil or avocado oil spray, for brushing

INSTRUCTIONS

1. Cook the potatoes:
Bring a medium pot of salted water to a boil. Add diced potatoes and cook for 8–10 minutes, or until fork-tender but not falling apart. Drain thoroughly, then let steam dry for 2–3 minutes. Lightly mash, keeping some chunks for texture.

2. Build the flavor base:
Meanwhile, heat olive oil and butter in a skillet over medium heat. Add onion and cook for 4–5 minutes until softened and lightly golden. Stir in garlic and ginger, then cook for 30 seconds until fragrant.

3. Season the filling:
Add curry powder, cumin, garam masala, turmeric, smoked paprika, crushed red pepper flakes (if using), salt, and pepper. Stir continuously for 20–30 seconds to bloom the spices and deepen the flavor.

4. Finish the filling:
Add potatoes and peas to the skillet. Gently stir everything together and lightly mash some of the potatoes while leaving texture throughout. Stir in cilantro and lemon juice. Taste and adjust salt if needed. The filling should taste slightly more seasoned than you think, as the wrapper softens the flavor. Let cool for 15–20 minutes before folding.

5. Prepare the sealing paste:
Meanwhile, stir flour and water together in a small bowl until a thick, glue-like paste forms. This helps keep the samosas securely sealed while air frying.

6. Fold the samosas:
If using spring roll wrappers, cut in half diagonally to create triangles. Shape into cones or triangle pockets according to package instructions. Add about 2 tbsp filling to each wrapper, leaving room around the edges. Seal carefully with flour paste, pressing edges firmly closed.

7. Preheat and prepare:
Preheat air fryer to 375°F for 3–5 minutes. Lightly brush or spray both sides of the samosas with oil for even browning and crisp texture.

8. Air fry until golden:
Arrange samosas in a single layer with space between each one. Air fry for 8 minutes, carefully flip, then cook another 5–7 minutes until deeply golden and crisp. Depending on your air fryer, total cook time may range from 13–15 minutes. The filling should be hot and the exterior crisp and blistered.

9. Cool slightly and serve:
Let cool for 3–5 minutes before serving, as the filling stays very hot. Serve warm with mint chutney, tamarind sauce, yogurt sauce, or spicy ketchup.


Helpful Tips to Perfect This Recipe

  • Let the filling cool before wrapping: Warm filling creates steam and can soften the wrappers too quickly, making folding harder and increasing the chance of tearing.
  • Seal edges really well: Press firmly with the flour paste, especially near corners. Even a small opening can cause the samosas to split during air frying.
  • Avoid overcrowding the basket: Leave a little space between samosas so the hot air circulates properly. This helps them turn evenly golden and crisp instead of patchy or soft.
  • Freeze for an easy homemade snack later: Freeze uncooked samosas on a tray until firm, then store in a freezer bag. Air fry straight from frozen at 375°F, adding about 4–5 extra minutes.
