INGREDIENTS
1 cup uncooked quinoa, rinsed and drained well
1 3/4 cups low-sodium vegetable broth
1 1/2 cups fresh or frozen corn, thawed if frozen and patted dry
1 (15-oz.) can black beans, rinsed and drained well
1 pint cherry tomatoes, halved
1 cup diced English cucumber
1 medium red bell pepper, diced
1/3 cup finely diced red onion
1 small jalapeño, seeded and finely chopped
1 large avocado, diced
1/4 tsp fine sea salt
1 tsp olive oil
1/2 cup chopped fresh cilantro
1/3 cup roasted pepitas
1/3 cup crumbled cotija cheese
1 tsp finely grated lime zest
1/4 cup fresh lime juice, plus more if needed
1/3 cup extra-virgin olive oil
1 tbsp honey
1 1/2 tsp mild chili powder
1/2 tsp ground cumin
1/2 tsp smoked paprika
1 small garlic clove, finely grated
3/4 tsp fine sea salt, plus more if needed
1/4 tsp black pepper
Lime wedges, for serving
INSTRUCTIONS
1. Cook the quinoa:
Combine the quinoa, vegetable broth, and 1/4 tsp salt in a medium saucepan. Bring to a boil, then cover and reduce the heat to low. Simmer for 14–16 minutes, until the liquid is absorbed and the quinoa is tender.
2. Rest and cool:
Remove the saucepan from the heat and let the quinoa stand, covered, for 5 minutes. Fluff with a fork, then spread it across a large plate or rimmed baking sheet until barely warm.
3. Char the corn:
Heat 1 tsp olive oil in a large skillet over medium-high heat. Add the corn and cook for 5–7 minutes, stirring occasionally, until lightly charred. Set aside to cool slightly.
4. Prepare the dressing:
Whisk the lime zest, lime juice, extra-virgin olive oil, honey, chili powder, cumin, smoked paprika, garlic, 3/4 tsp salt, and black pepper. Stir in the red onion and jalapeño, then let them rest for 10 minutes.
5. Assemble the salad:
Place the quinoa in a large bowl and toss with two-thirds of the dressing. Add the corn, black beans, tomatoes, cucumber, bell pepper, cilantro, half the pepitas, and half the cotija. Add the remaining dressing and toss gently.
6. Rest and finish:
Let the salad stand for 10 minutes. Taste and add more salt or lime juice if needed. Gently fold in the avocado, then finish with the remaining pepitas and cotija. Serve with lime wedges.

- Drain everything thoroughly: Excess water from the quinoa, beans, corn, or vegetables can dilute the chili lime dressing and make the salad watery.
- Keep the quinoa fluffy: Cook only until the broth is absorbed. Then spread the quinoa out so it cools quickly without steaming itself soft.
- Add avocado at the end: Folding it in after the salad rests keeps the pieces creamy, fresh-looking, and less likely to break apart.
