Honey-Lemon Peach Feta Salad with diced peaches, arugula, crumbled feta, pistachios, red onion, and fresh herbs in a white bowl.
Fresh Honey-Lemon Peach Feta Salad with juicy diced peaches, creamy feta, crisp greens, pistachios, and a bright honey-lemon vinaigrette.

Honey-Lemon Peach Feta Salad is fresh, colorful, and full of bright summer flavor. Sweet diced peaches bring juicy softness, while creamy feta adds just the right salty bite. Then, peppery arugula, fresh basil, mint, toasted pistachios, and thin red onion make every forkful crisp, fragrant, and balanced.

The honey-lemon vinaigrette keeps this salad light but flavorful. It adds a sunny sweetness without covering up the peaches. Also, because everything comes together quickly, this is an easy salad for lunch, dinner, or entertaining. The key is using ripe but firm peaches, so they stay juicy and beautiful instead of turning too soft. Simple, fresh, and just a little elegant — exactly the kind of salad that looks special without making extra work.

2 tbsp chopped fresh basil
1 tbsp chopped fresh mint
1 tsp lemon zest
1/3 cup thinly sliced red onion

1 tbsp fresh lemon juice
1 tbsp white balsamic vinegar
1 1/2 tsp honey
1 tsp Dijon mustard

Whisk the olive oil, lemon juice, white balsamic vinegar, honey, Dijon mustard, salt, and black pepper until smooth.

2. Soften the onion:
Add the red onion to a small bowl with 1 tbsp of the vinaigrette. Toss gently and let it rest for 5 minutes.

Serve immediately while the greens are crisp and the peaches are fresh.

HELPFUL TIPS TO PERFECT THIS RECIPE

  • Use peaches that are ripe but still firm: Soft peaches taste delicious, but they can break down quickly in salad. For the best Honey-Lemon Peach Feta Salad, choose fruit that smells sweet and gives just slightly when pressed.
  • Dress lightly at first: Because peaches are naturally juicy, start with half the vinaigrette. Then, add more only if needed so the salad stays fresh instead of heavy.
  • Toast the pistachios for better flavor: A quick toast makes them crunchier and brings out their buttery flavor. However, let them cool before adding so they do not wilt the greens.
  • Serve shortly after assembling: This salad is best fresh. If making ahead, prep the vinaigrette, slice the onion, crumble the feta, and toast the pistachios in advance, then assemble right before serving.
