INSTRUCTIONS
1. Cook the bacon:
Cook the bacon in a skillet over medium heat, turning as needed, until crisp, about 8–12 minutes. Transfer to a paper towel-lined plate and let cool completely before chopping.
2. Prepare the peas:
Check the package directions. If the package permits thawing for cold use, thaw the peas in the refrigerator. Otherwise, cook them using the shortest recommended package time, then immediately transfer them to ice water. Drain thoroughly and gently blot very dry.
3. Make the dressing:
Whisk the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, garlic powder, black pepper, salt, and smoked paprika until smooth.
4. Assemble the salad:
Combine the cold peas, cheddar, celery, red onion, chives, and three chopped eggs in a large bowl. Add the dressing and gently fold until evenly coated.
5. Chill the salad:
Cover and refrigerate for at least 1 hour or up to 4 hours, allowing the dressing to thicken and the flavors to develop.
