These 3-Ingredient Sausage Ball Bites are crispy on the outside, cheesy in the middle, and packed with savory sausage flavor in every bite. They are easy enough for busy mornings, yet perfect for brunch spreads, game day, holidays, or simple snacking. Best of all, they come together with only three ingredients and almost no prep.
Instead of relying on a brand-specific baking mix, this version uses pancake and waffle mix for a homemade, approachable twist that works beautifully. The result is warm, golden sausage bites with crispy edges, melty cheddar pockets, and a soft, tender center that keeps everyone reaching for one more.

Recipe Yield: 24–28 sausage ball bites
INGREDIENTS
1 lb breakfast pork sausage, uncooked
2 cups freshly shredded sharp cheddar cheese
1¼ cups pancake & waffle mix
INSTRUCTIONS
1. Preheat oven:
Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper.
2. Bring ingredients together:
Let the sausage sit at room temperature for about 15–20 minutes if very cold. Add the sausage, shredded cheddar, and pancake & waffle mix to a large bowl. Using clean hands, mix until fully combined. The mixture may seem crumbly at first, however keep mixing until it holds together. If needed, gently knead the mixture for 1–2 minutes.
3. Shape the sausage bites:
Roll the mixture into 1-inch balls, about 1 tbsp each. Place them on the prepared baking sheet with a little space between them.
4. Bake until golden:
Bake for 18–22 minutes, or until golden brown and cooked through. The centers should reach 160°F for fully cooked pork sausage.
5. Cool slightly and serve:
Let cool for about 5 minutes before serving. Enjoy warm on their own or serve with honey mustard, hot honey, or your favorite dipping sauce.
Helpful Tips to Perfect This Recipe
- Freshly shredded cheese melts best: Pre-shredded cheese contains anti-caking ingredients that can make sausage ball bites slightly drier. Freshly shredded sharp cheddar creates better melt and texture.
- Do not make them too large: Smaller 1-inch sausage bites bake more evenly and stay tender inside. Larger ones can brown too quickly before the center finishes cooking.
- Stop baking once golden: Overbaking is the fastest way to dry sausage ball bites. Pull them once golden brown and fully cooked for the best soft, cheesy center.
