Recipe Yield: 6 servings
INGREDIENTS
12 oz cheese tortellini
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
¾ cup salami, sliced
½ cup black olives, sliced
½ cup mozzarella pearls
¼ cup red onion, thinly sliced
¼ cup fresh basil, chopped
Dressing:
⅓ cup olive oil
3 tbsp red wine vinegar
1 tbsp Dijon mustard
1 tsp honey
2 cloves garlic, minced
½ tsp Italian seasoning
¾ tsp salt
¼ tsp black pepper
1 tbsp grated Parmesan (optional but recommended)
INSTRUCTIONS
1. Cook the tortellini:
Bring a large pot of water to a boil. Add 1 tbsp salt. Then cook tortellini according to package directions until just tender. Drain, then briefly rinse with cold water to stop cooking. Shake off excess water well so the salad doesn’t become watery.
2. Prepare the vegetables:
Meanwhile, slice cherry tomatoes, cucumber, salami, olives, and red onion. Then place everything into a large mixing bowl.
3. Make the dressing:
In a small bowl, whisk olive oil, red wine vinegar, Dijon mustard, honey, garlic, Italian seasoning, salt, and black pepper until smooth and well combined. Then stir in grated Parmesan if using for added depth.
4. Combine everything:
Add the cooled, well-drained tortellini to the bowl with vegetables. Then pour about ¾ of the dressing over the top and gently toss. Add remaining dressing as needed to fully coat.
5. Finish and chill:
Finally, fold in mozzarella pearls and fresh basil. Refrigerate for at least 30 minutes to allow flavors to develop. Before serving, toss again and adjust seasoning if needed.
Helpful Tips to Perfect This Recipe
- Chill Before Serving:
Allowing the salad to rest enhances flavor absorption. As a result, each bite becomes more balanced and vibrant. - Use Fresh Ingredients:
Fresh basil, crisp vegetables, and quality olive oil significantly improve taste. Therefore, avoid pre-cut or wilted ingredients whenever possible. - Don’t Overcook Tortellini:
Cook until just tender. Otherwise, overcooked pasta may become too soft and break apart when tossing.
