INGREDIENTS

1 1/2 lbs sweet potatoes, peeled and cut into 3/4-inch cubes
1 1/4 lbs boneless skinless chicken breasts, cut into 1-inch pieces
1/2 cup thick barbecue sauce
1 tbsp apple cider vinegar
2 tsp Dijon mustard
1 tsp Worcestershire sauce
1 tbsp unsalted butter
2 1/2 tbsp olive oil, divided
1 tsp kosher salt, divided
1 tsp smoked paprika, divided
1/2 tsp black pepper, divided
1/2 tsp garlic powder
2 tbsp chopped fresh parsley

INSTRUCTIONS

1. Roast the sweet potatoes:
Preheat oven to 425°F. Toss sweet potatoes with 1 1/2 tbsp olive oil, 1/2 tsp salt, 1/2 tsp smoked paprika, and 1/4 tsp black pepper. Spread in a single layer on a large baking sheet. Roast 24–28 minutes, turning once, until browned and tender.

2. Make the barbecue glaze:
Meanwhile, stir barbecue sauce, apple cider vinegar, Dijon, and Worcestershire together in a small bowl. Set aside.

3. Season the chicken:
Pat chicken dry. Toss with remaining 1/2 tsp salt, 1/2 tsp smoked paprika, 1/4 tsp black pepper, and garlic powder.

4. Brown the chicken:
Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken in a single layer, cooking in two batches if needed. Cook undisturbed for 2–3 minutes, then turn and cook 2–3 minutes more until browned and nearly cooked through.

5. Glaze the chicken:
Reduce heat to medium-low. Add barbecue glaze and toss well. Simmer for 1–2 minutes, stirring occasionally, until the sauce is glossy and the chicken reaches 165°F. Remove from heat and stir in butter until melted.

6. Assemble the bowls:
Divide roasted sweet potatoes among bowls. Spoon BBQ chicken and extra glaze over the top, then finish with fresh parsley.
