INSTRUCTIONS
1. Preheat and prepare:
Preheat the oven to 425°F. Line one extra-large rimmed baking sheet or two standard large baking sheets with parchment paper.
2. Make the balsamic glaze:
Whisk balsamic vinegar, honey, Dijon, soy sauce, garlic, and oregano in a small saucepan. Bring to a gentle simmer over medium heat.
3. Finish the glaze:
Cook for 4–5 minutes, stirring occasionally, until slightly reduced but still pourable. Remove from the heat and whisk in the butter. Divide between two bowls, reserving one untouched for serving.
4. Season the chicken:
Pat the chicken thoroughly dry. Toss with 1 tbsp olive oil, ¾ tsp salt, black pepper, smoked paprika, and garlic powder.
5. Begin roasting:
Toss the peppers and onion with 1 tbsp olive oil and ¼ tsp salt. Arrange them with the chicken in a spacious single layer. Bake for 10 minutes.
6. Add the remaining vegetables:

Brush the chicken and vegetables with the glaze intended for cooking. Bake for 10–13 minutes, until the vegetables are tender and the chicken reaches 165°F internally. For two pans, rotate and switch their positions halfway through baking.

Rest for 5 minutes. Drizzle with the reserved clean glaze, then finish with basil and parsley before serving.
