8 cups chopped romaine lettuce
1½ cups cherry tomatoes, halved
¾ cup shredded sharp cheddar cheese
1 large avocado, diced
2 tbsp chopped fresh chives
1 lb plant-based burger ground
¼ cup thinly sliced red onion
12 oz baby gold potatoes, cut into ½-inch pieces
1½ tbsp olive oil, divided
½ tsp kosher salt, plus more to taste
½ tsp black pepper, divided
2 tsp sesame seeds
½ cup finely chopped yellow onion
1 tsp vegetarian Worcestershire sauce
½ tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
¼ cup mayonnaise
¼ cup plain Greek yogurt
2 tbsp ketchup
2 tsp yellow mustard
3 tbsp dill pickle brine, divided
¾ cup finely chopped dill pickles, divided
¼ tsp smoked paprika
¼ tsp garlic powder
¼ tsp onion powder
INSTRUCTIONS
1. Roast the potatoes:
Preheat the oven to 425°F. Toss the potatoes with 1 tbsp olive oil, salt, and ¼ tsp black pepper. Spread in one layer on a parchment-lined baking sheet and roast for 20 minutes.
2. Quick-pickle the onion:
Meanwhile, toss the red onion with 2 tbsp pickle brine. Let it stand for at least 10 minutes, then drain well.
3. Make the burger sauce:
Whisk the mayonnaise, Greek yogurt, ketchup, mustard, remaining 1 tbsp pickle brine, ¼ cup pickles, smoked paprika, garlic powder, and onion powder. Refrigerate until serving.
4. Finish the potatoes:
Toss the potatoes, then sprinkle them with sesame seeds. Roast for another 5–7 minutes until deeply golden with crisp edges.
5. Cook the burger mixture:
Heat the remaining ½ tbsp olive oil in a large skillet over medium-high heat. Add the yellow onion and cook for 3 minutes until softened.
6. Brown and season:
Add the plant-based burger ground and press it into an even layer. Let it cook undisturbed for 2 minutes. Then cook for 5–7 minutes, breaking it into irregular crumbles, or follow the package directions.
7. Finish the crumbles:
Stir in the Worcestershire sauce, smoked paprika, garlic powder, onion powder, and remaining black pepper. Cook for 1 minute, then taste before adding more salt.
8. Assemble and serve:
Divide the romaine among four bowls. Add tomatoes, remaining ½ cup pickles, pickled red onion, avocado, sesame potatoes, and warm burger crumbles. Sprinkle the cheddar over the warm crumbles, drizzle with burger sauce, and finish with chives.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Prefer regular ground beef? Substitute 1 lb lean ground beef, preferably 90% lean. Skip the remaining ½ tbsp olive oil unless the skillet seems dry, drain any excess fat, and cook the beef to 160°F before seasoning.
- Give the potatoes enough space: Use a large baking sheet and keep the pieces in one layer. Overcrowding prevents crisp edges.
