Strawberry Greek Frozen Yogurt is the kind of freezer treat that feels bright, creamy, and just a little special without being fussy. Fresh strawberries get roasted first, so their flavor turns deeper and jammy instead of icy. Then they blend into full-fat Greek yogurt with honey, vanilla, and a splash of cream for a smooth, tangy-sweet finish.
The texture lands between classic frozen yogurt and strawberry ice cream, which makes it easy to love. It scoops beautifully after a short freezer rest and tastes fresh enough for a sunny afternoon, yet cozy enough for a quiet dessert after dinner. Plus, those little strawberry flecks make every scoop look homemade in the best way. Simple ingredients, real fruit, and a creamy pink finish — this one earns its freezer space.

Recipe Yield: 6 servings
INGREDIENTS
1 lb fresh strawberries, hulled and chopped
2 cups plain whole-milk Greek yogurt
1/2 cup heavy cream
1/2 cup granulated sugar, divided
2 tbsp honey
1 tbsp fresh lemon juice
1 tsp finely grated lemon zest
1 tsp vanilla extract
1/8 tsp fine salt
INSTRUCTIONS
1. Prep the machine:
Freeze the ice cream maker bowl overnight, or according to the manufacturer’s instructions.
2. Roast the strawberries:
Preheat the oven to 375°F. Toss the strawberries with 1/4 cup sugar and lemon juice on a parchment-lined baking sheet.
3. Make them jammy:
Roast for 18–20 minutes, stirring once, until the strawberries are soft, glossy, and syrupy. Cool completely.
4. Blend the base:
Blend half of the cooled strawberries, including some juices, with the Greek yogurt, heavy cream, honey, lemon zest, vanilla, remaining 1/4 cup sugar, and salt until smooth.
5. Chill the mixture:
Cover and refrigerate for 2 hours, or until the base is very cold.
6. Churn the frozen yogurt:
Churn according to your ice cream maker instructions until thick and creamy, about 20–25 minutes.
7. Add the strawberries:
Fold in the remaining roasted strawberries and juices, lightly breaking up any large pieces.
8. Freeze and serve:
Transfer to a chilled shallow freezer-safe container. Press parchment against the surface, cover, and freeze for 2–3 hours. Rest 10–15 minutes before scooping.
Helpful Tips to Perfect This Recipe
- Use whole-milk Greek yogurt for the best texture. Lower-fat yogurt can freeze harder and icier, while whole-milk Greek yogurt keeps this strawberry frozen yogurt creamier and smoother.
- Cool the strawberries completely before blending. Warm fruit softens the base and slows down churning. However, fully cooled roasted strawberries blend beautifully and keep the flavor rich.
- Do not skip the chilling time. A very cold base churns faster, which helps create a creamier texture with fewer ice crystals.
- Use a shallow container for freezing. It helps the frozen yogurt firm evenly and makes scooping easier after the short room-temperature rest.
- For a smoother finish, blend all the strawberries. Folding in half gives pretty homemade strawberry flecks, but blending everything creates a silkier frozen yogurt.
