INGREDIENTS

For the Salad
4 cups fresh pineapple, cut into 3/4-inch chunks and drained of excess juice
5 ripe but firm kiwis, peeled, quartered lengthwise, and sliced
1 large Honeycrisp apple, peeled, cored, and cut into short, thin matchsticks
1/2 cup unsweetened coconut flakes

For the Vanilla-Coconut Glaze
1/4 cup sweetened cream of coconut, stirred well
1 tbsp honey
2 tbsp fresh lime juice
1 tsp finely grated lime zest
1 tsp pure vanilla extract
1/8 tsp kosher salt

INSTRUCTIONS

1. Toast the coconut:
Cook the coconut in a dry skillet over medium-low heat for 3–4 minutes, stirring frequently, until lightly golden. Transfer it to a plate and cool completely.

2. Make the glaze:
Whisk the cream of coconut, honey, lime juice, lime zest, vanilla, and salt together until completely smooth.

3. Coat the apple:
Place the apple matchsticks in a large serving bowl. Immediately add 2 tbsp of the glaze and toss gently to coat.

4. Add the pineapple:
Add the pineapple and remaining glaze. Toss gently until the fruit is evenly coated.

5. Fold in the kiwi:
Carefully fold in the sliced kiwi without crushing the fruit. Cover and refrigerate for 15 minutes.

6. Finish and serve:
Sprinkle with the cooled toasted coconut immediately before serving.
