INGREDIENTS

2 tbsp graham cracker crumbs
3 oz full-fat cream cheese, very softened
1 tsp unsalted butter, melted
1/8 tsp ground cinnamon
2 tbsp granulated sugar
1 tbsp sour cream
1/2 tsp fresh lemon juice
1/4 tsp vanilla extract
1/2 tsp cornstarch
1 pinch fine salt
1 tsp graham cracker crumbs, for topping
1 pinch ground cinnamon, for topping

INSTRUCTIONS

1. Make the crumb base:
Stir 2 tbsp graham cracker crumbs, melted butter, and cinnamon in a 10 to 12 oz microwave-safe mug. Press gently into the bottom.

2. Mix the filling:
In a small bowl, stir the softened cream cheese and sugar until smooth. Then add the sour cream, lemon juice, vanilla, cornstarch, and salt.

3. Fill the mug:
Spoon the cheesecake filling over the crumb base. Smooth the top lightly, then tap the mug once or twice to settle the filling.

4. Microwave in short bursts:
Microwave for 20 seconds. Let it rest for 20 seconds. Then microwave in 10-second bursts, resting 10 seconds between each burst, 2 to 4 more times, until the edges look set and the center still has a soft wobble.

5. Cool and chill:
Let the mug cheesecake rest at room temperature for 10 minutes. Then refrigerate for 30 to 40 minutes, until creamy and set.

6. Finish and serve:
Sprinkle with the topping graham cracker crumbs and cinnamon. Serve chilled or slightly cool, straight from the mug.
