INSTRUCTIONS
1. Prepare the pan:
Preheat the oven to 350°F. Lightly grease a 9×13-inch metal baking pan and line it with parchment paper, leaving overhang on two sides.
2. Make the crumble mixture:
Whisk the flour, sugar, baking powder, and salt together. Cut in the cold butter until coarse crumbs with small pea-sized pieces form.
3. Finish the dough:
Whisk the egg and vanilla together. Drizzle over the flour mixture, then toss gently until moist clumps form and no powdery flour remains.
4. Form the crust:
Reserve 2 loosely packed cups of the mixture for the topping. Firmly press the remaining mixture evenly into the prepared pan.
5. Prebake the crust:
Bake for 15–17 minutes, until the surface looks set and the edges are lightly golden. Keep the oven heated.
6. Begin the filling:
Whisk the sugar and cornstarch together in a medium saucepan. Add 4 cups blueberries, lemon juice, and salt, then stir gently to coat.
7. Thicken the filling:
Cook over medium heat for 7–10 minutes, stirring often, until the berries release their juices and the mixture bubbles and visibly thickens.
8. Finish the filling:
Remove from the heat. Stir in the lemon zest, vanilla, and remaining 1 cup blueberries, then let the filling rest for 5 minutes.
9. Assemble the bars:
Spread the warm blueberry filling evenly over the crust. Crumble the reserved dough over the top, leaving a few small spaces for the filling to show.
10. Bake until golden:
Bake for 38–45 minutes, until the topping is golden and the filling bubbles around the edges and in several spots near the center.
11. Cool and slice:
Cool completely in the pan for at least 3 hours. Lift out using the parchment, then slice into 16 bars with a clean, sharp knife.
