Soft chive eggs, smoky ham, and sharp cheddar are layered between crisp slices of toasted bread. A creamy honey-Dijon spread adds just enough sweetness and tang to brighten every rich, savory bite.

The ham is warmed first to bring out its flavor, while the eggs are cooked gently so they stay tender inside the hot sandwich. Cheese is tucked above and below the filling, helping everything melt together and hold neatly in place. The result is crisp outside, soft inside, and wonderfully cheesy around the edges.

Serve it for a relaxed weekend breakfast, an easy brunch, or a comforting breakfast-for-dinner meal. Fresh fruit, breakfast potatoes, or a hot cup of coffee are all it needs.

Recipe Yield: 4 sandwiches

INGREDIENTS

8 slices thick-cut white sandwich bread
8 thin slices sharp cheddar cheese (about 6 oz)
8 oz thinly sliced smoked deli ham
6 large eggs
3 tbsp unsalted butter, softened and divided
3 tbsp mayonnaise
2 tsp Dijon mustard
1 tsp honey
2 tbsp whole milk
1 tbsp finely chopped fresh chives
1/4 tsp kosher salt
1/4 tsp ground black pepper

INSTRUCTIONS

1. Make the sandwich spread:
Stir the mayonnaise, Dijon mustard, and honey together until smooth.

2. Warm the ham:
Heat a large nonstick skillet over medium heat. Add the ham in loose folds and cook for 1–2 minutes, turning once, until hot with lightly browned edges. Transfer to a plate.

3. Cook the eggs:
Reduce the heat to medium-low. Whisk the eggs, milk, chives, salt, and pepper. Melt 1 tbsp butter in the skillet, then add the eggs. Slowly push them toward the center until large, soft curds form and no visible liquid egg remains, 2–3 minutes. Remove from the heat and divide into four portions.

4. Assemble the sandwiches:
Spread the honey-Dijon mixture over one side of every bread slice. Layer one cheddar slice, ham, eggs, and another cheddar slice over four pieces. Close with the remaining bread, spread-side down.

5. Toast until golden:
Spread the sandwich exteriors with the remaining 2 tbsp butter. Wipe the skillet clean, then cook two sandwiches at a time over medium-low heat for 3–4 minutes. Flip, cover, and cook for 2–3 minutes until deeply golden and melted. Press gently as they cook.

6. Rest and serve:
Rest the sandwiches for 1 minute before slicing. Serve immediately while the cheese is warm and melty.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Use thin cheese slices: Thin cheddar melts evenly before the bread becomes too dark. Cheese above and below the filling also helps secure the eggs.
  • Keep the heat medium-low: Rushing with higher heat can burn the buttered bread while leaving the center lukewarm. Covering after flipping creates gentle heat around the sandwich.
  • Prepare components ahead: The honey-Dijon spread and cooked eggs can be refrigerated separately for up to 2 days. Assemble and toast the sandwiches shortly before serving.
