1. Prepare the beef:

2. Mix the sauce:
Whisk ¼ cup soy sauce, ⅓ cup water, brown sugar, honey, rice vinegar, ginger, garlic, and sesame oil in a small bowl. Separately, stir 2 tsp cornstarch with 2 tbsp cold water until completely smooth.
3. Sear the beef:
Heat 1 tbsp avocado oil in a large, heavy skillet over medium-high heat until shimmering. Add half the beef in a single layer. Sear undisturbed for 60–90 seconds, then toss and cook for 30–60 seconds more, until browned but still slightly pink. Transfer to a plate. Repeat with the remaining oil and beef.
4. Thicken the sauce:
Reduce the heat to medium. Whisk the teriyaki sauce again, then pour it into the skillet. Simmer for 1–2 minutes, stirring occasionally. Stir the cornstarch mixture again, then gradually whisk it into the sauce. Cook for 30–60 seconds, until glossy and lightly thickened.
5. Finish the teriyaki:
Return the beef and any collected juices to the skillet. Toss for 30–60 seconds, just until evenly glazed and the thickest pieces reach at least 145°F.
