1 3/4 lb boneless, skinless chicken thighs, 6–8 pieces
1 tbsp low-sodium soy sauce
1/4 cup low-sodium chicken broth
3 garlic cloves, finely minced
1 tsp Italian seasoning

1/2 tsp black pepper

INSTRUCTIONS

1. Make the balsamic sauce:
Whisk the balsamic vinegar, chicken broth, honey, Dijon mustard, soy sauce, garlic, and Italian seasoning in a small bowl.

2. Season the chicken:
Pat the chicken thighs dry. Then season both sides evenly with the salt, black pepper, and garlic powder.

3. Sear the chicken:
Heat the olive oil in a large 12-inch skillet over medium-high heat. Add the chicken in a single layer and sear for 4–5 minutes, until deeply golden and easily released from the skillet. Turn and cook for another 3 minutes, then transfer to a plate.

4. Start the glaze:
Reduce the heat to medium. Pour the balsamic mixture into the skillet and scrape up the flavorful browned bits. Simmer for 2 minutes, stirring occasionally.

5. Finish cooking the chicken:
Return the chicken and any collected juices to the skillet. Reduce the heat to medium-low and simmer uncovered for 5–8 minutes, turning once and spooning the glaze over the chicken. Once the thickest pieces reach 165°F, transfer the chicken to a clean plate.

6. Finish and serve:
If needed, simmer the glaze for another 1–3 minutes, until glossy and lightly thickened. Remove from the heat and stir in the butter. Return the chicken to the skillet and coat generously with the glaze. Sprinkle with parsley and rest for 5 minutes before serving.
