½ cup finely diced yellow onion
1 small jalapeño, seeded and finely diced
2 garlic cloves, minced
1 tbsp tomato paste
1½ tsp ground cumin
1 tsp smoked paprika
½ tsp chili powder
½ tsp ground coriander
½ tsp dried oregano
¾ tsp kosher salt
¼ tsp black pepper
¼ cup water
1 tsp maple syrup
1 tbsp fresh lime juice
Assembling:
10 small corn tortillas
⅓ cup crumbled cotija cheese
2 tbsp chopped fresh cilantro
Lime wedges, for serving
INSTRUCTIONS
1. Make the avocado lime slaw:
Mash half the avocado in a medium bowl. Stir in the yogurt, lime juice, lime zest, honey, and salt until creamy. Dice the remaining avocado, then gently fold it in with the cabbage and cilantro. Refrigerate while preparing the filling.
2. Dry the chickpeas:
Pat the chickpeas thoroughly dry with a clean kitchen towel. Removing the surface moisture helps them brown properly.
3. Crisp the chickpeas:
Heat 1 tbsp avocado oil in a large skillet over medium-high heat. Add the chickpeas in one layer. Cook for 7–8 minutes, stirring occasionally, until golden and lightly blistered. Transfer them to a plate.
4. Sauté the aromatics:
Reduce the heat to medium and add the remaining oil. Add the onion and jalapeño, then cook for 4 minutes until softened. Stir in the garlic and cook for 30 seconds.

Add the tomato paste, cumin, smoked paprika, chili powder, coriander, oregano, salt, and pepper. Cook for 1 minute, stirring constantly, until fragrant.
6. Build the black bean base:
Add the black beans, water, and maple syrup. Cook for 3–4 minutes, stirring occasionally, until thickened. Mash about one-third of the black beans against the skillet to create a creamy binder.
7. Finish the filling:
Gently fold in the chickpeas and cook for 1–2 minutes until heated and evenly coated. Remove from the heat, then stir in the lime juice.
8. Warm the tortillas:
Warm the tortillas in a dry skillet over medium-high heat for 20–30 seconds per side. Stack them beneath a clean kitchen towel to keep them warm and flexible.
9. Assemble and serve:
Divide the chickpea black bean filling among the tortillas. Top with avocado lime slaw, cotija, and cilantro. Serve immediately with lime wedges.
HELPFUL TIPS TO PERFECT THIS RECIPE
