1 1/2 cups (12 oz) full-fat small-curd cottage cheese
1 1/2 cups all-purpose flour, spooned and leveled
1 1/2 cups fresh blueberries, divided
3 large eggs
1/4 cup pure maple syrup
1/4 cup packed light brown sugar
1/4 cup unsalted butter, melted and slightly cooled
2 tbsp whole milk
2 tsp vanilla extract
1 tbsp finely grated lemon zest
1 tbsp fresh lemon juice
1/4 tsp almond extract
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp fine salt
1 tbsp turbinado sugar, optional

INSTRUCTIONS

1. Preheat and prepare:
Preheat the oven to 350°F. Grease an 8-inch square baking dish and line it with parchment paper.

2. Blend the cottage cheese mixture:
Blend the cottage cheese, eggs, maple syrup, brown sugar, butter, milk, vanilla, lemon zest, lemon juice, and almond extract until completely smooth.

3. Combine the dry ingredients:
Whisk the flour, baking powder, baking soda, and salt in a large mixing bowl.

4. Make the batter:
Pour the blended mixture into the dry ingredients. Fold gently until no dry flour remains, without overmixing.

5. Add the blueberries:
Fold 1 cup blueberries gently into the batter. Spread the batter evenly in the prepared baking dish.

6. Finish the top:
Scatter the remaining 1/2 cup blueberries over the batter. Sprinkle with turbinado sugar, if using.

7. Bake until set:
Bake for 42–50 minutes. The top should be golden, and the center should spring back gently without appearing wet. A toothpick inserted near the center should come out with moist crumbs but no wet batter. For additional certainty, the center should register about 200°F.

8. Cool and serve:
Cool in the baking dish for at least 30 minutes before slicing. Serve warm, chilled, or gently reheated.
