Buttery French Onion Mushroom Tart filled with caramelized onions, sautéed mushrooms, and melted Gruyère cheese in a crisp homemade tart crust.

French Onion Mushroom Tart is a warm, savory dish inspired by the comforting flavors of classic French onion soup. At first glance it looks elegant, yet the recipe is surprisingly simple. Sweet caramelized onions slowly cook until golden and deeply flavorful. Meanwhile, earthy mushrooms add richness and texture that perfectly balances the sweetness of the onions.

Because the filling is layered inside a buttery tart crust, every slice delivers crisp edges and a soft, savory center. As the tart bakes, nutty Gruyère melts gently over the onions and mushrooms. Consequently, the flavors blend into a rich, comforting dish that feels both rustic and refined.

Interestingly, French cooks have long relied on onions as a staple ingredient. Over time, they discovered that slow caramelization transforms humble onions into something extraordinary. Therefore, many classic dishes—from soups to savory tarts—feature them as the star ingredient.

This French Onion Mushroom Tart follows the same tradition. Simple ingredients, careful cooking, and balanced flavors create a dish that feels both cozy and elegant.

Recipe Yield: 6 servings

INGREDIENTS

1 1/4 cup all-purpose flour
1/2 tsp salt
8 Tbsp cold unsalted butter, cubed
3–4 Tbsp ice water

2 Tbsp butter
1 Tbsp olive oil
2 large yellow onions, thinly sliced
8 oz cremini mushrooms, sliced
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp fresh thyme leaves

3/4 cup shredded Gruyère cheese
1/4 cup shredded mozzarella cheese
2 Tbsp heavy cream

1 Tbsp chopped parsley

INSTRUCTIONS

1. Prepare tart dough:
In a bowl, whisk flour and salt. Add cold butter and cut it in with a pastry cutter until the mixture resembles coarse crumbs. Gradually add ice water and mix just until dough forms. Shape into a disk, wrap, and chill for 30 minutes.

2. Pre-bake the tart shell:
Preheat oven to 375°F. Roll dough into a 10–11 inch circle and press into a 9-inch tart pan. Trim edges and prick the bottom with a fork. Line with parchment and add pie weights. Bake 15 minutes, remove weights, then bake 5 minutes more.

3. Caramelize onions:
Meanwhile, melt butter and olive oil in a skillet over medium heat. Add onions and cook slowly for 12–15 minutes until deeply golden and sweet.

4. Cook mushrooms:
Add mushrooms and cook 6–7 minutes until browned and tender. Stir in garlic, salt, pepper, and thyme, cooking 1 minute more.

5. Assemble tart:
Spread the onion-mushroom mixture evenly into the warm tart shell. Then sprinkle Gruyère and mozzarella across the filling. Next, arrange a few reserved sautéed mushroom slices on top for texture and presentation. Finally, drizzle heavy cream lightly over the surface.

6. Bake tart:
Return tart to the oven and bake 15–18 minutes until cheese melts and edges are golden.

7. Finish and serve:
Allow the tart to cool slightly, then sprinkle parsley on top. Slice and serve warm.

Helpful Tips to Perfect This Recipe

Blind baking keeps the crust crisp.
First bake the tart shell before adding filling. As a result, the crust stays firm and flaky instead of absorbing moisture from the onions and mushrooms.

Caramelize onions slowly.
Cook onions over moderate heat rather than rushing the process. Consequently, the natural sugars develop deeper flavor, creating the signature richness associated with French onion dishes.

Choose flavorful mushrooms.
Cremini mushrooms provide deeper flavor than white button mushrooms. Additionally, mixing cremini with shiitake can add even more savory depth to the tart.
