The best part is the contrast. Most of the mushrooms are folded into the sauce, while the deeply browned pieces are saved for the top. INGREDIENTS

12 oz fettuccine or tagliatelle
16 oz cremini mushrooms, sliced 1/4-inch thick
1 cup freshly shredded Gruyère cheese
1/3 cup finely grated Parmesan cheese, plus more for serving
1 medium shallot, finely chopped
3 garlic cloves, minced
2 tbsp extra-virgin olive oil, divided
2 tbsp unsalted butter, divided
1/2 tsp kosher salt, plus more for pasta water and to taste
1/2 tsp freshly ground black pepper
1 tsp fresh thyme leaves
1/4 tsp crushed red pepper flakes
1/2 cup dry white wine
1 cup heavy cream
1 tsp Dijon mustard
3/4–1 cup reserved pasta water
1 tsp fresh lemon juice
2 tbsp chopped fresh parsley

INSTRUCTIONS

1. Cook the pasta:
Bring a large pot of generously salted water to a boil. Cook the pasta until 1 minute shy of al dente. Reserve 1 cup pasta water, then drain.

2. Brown the mushrooms:
Meanwhile, heat 1 tbsp olive oil and 1 tbsp butter in a large 12-inch skillet over medium-high heat. Add half the mushrooms in one layer. Cook undisturbed for 3 minutes, then stir once or twice and cook for 2–3 minutes until deeply browned. Transfer to a plate and repeat with the remaining oil, butter, and mushrooms.

3. Build the flavor:
Reduce the heat to medium. Return all but one-third of the mushrooms to the skillet. Add the salt, black pepper, and shallot. Cook for 2–3 minutes until the shallot softens. Then, stir in the garlic, thyme, and red pepper flakes for 30 seconds.

4. Make the cream sauce:
Pour in the white wine and scrape up the browned bits. Simmer for 3–4 minutes, until the wine has almost completely evaporated. Stir in the heavy cream and Dijon mustard. Reduce the heat to medium-low and gently simmer for 2 minutes without boiling.

5. Finish the pasta:
Add the drained pasta and 1/2 cup reserved pasta water. Toss over low heat for 1–2 minutes, until the pasta is al dente and lightly coated. Remove the skillet from the heat and let it stand for 30 seconds. Gradually add the Gruyère and Parmesan in three additions, tossing until smooth and glossy. Stir in the lemon juice, then add more pasta water as needed. Taste and adjust the salt and pepper.

6. Garnish and serve:
Divide the pasta among bowls. Top with the reserved browned mushrooms, parsley, and additional Parmesan. Serve immediately.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Give the mushrooms room to brown: Cook them in two batches and leave them undisturbed at first. Crowding or constant stirring traps moisture and prevents caramelization.
  • Finely shred both cheeses: Smaller shreds melt quickly and evenly. Avoid packaged shredded cheese, which may produce a thicker or slightly grainy sauce.
  • Keep the cream at a gentle simmer: A hard boil can make the sauce oily or overly thick. Also, remove the skillet from direct heat before adding the cheese.
  • Adjust the sauce before serving: The pasta will continue absorbing liquid. Add warm pasta water a little at a time until the sauce looks glossy and slightly looser than expected.
  • Replace the wine when needed: Use 1/2 cup low-sodium vegetable broth instead. Add an additional 1 tsp lemon juice at the end to replace the wine’s acidity.
