2 thick-cut sourdough bread slices
1/3 cup crumbled feta cheese, divided
2 tbsp plain whole-milk Greek yogurt
1 tsp finely grated lemon zest
1 tsp fresh lemon juice
1/8 tsp dried oregano
1 tbsp plus 1 tsp extra-virgin olive oil, divided
1 green onion, thinly sliced
1 small garlic clove, finely grated
4 packed cups baby spinach
1/4 tsp kosher salt, divided
1/4 tsp black pepper, divided
2 large eggs
1 tbsp chopped fresh parsley or dill
1/8 tsp crushed red pepper flakes, optional

INSTRUCTIONS

1. Make the feta spread:
Mash 1/4 cup feta with the Greek yogurt, lemon zest, lemon juice, and oregano until creamy but still slightly textured.

2. Toast the bread:
Heat a large nonstick skillet over medium heat. Brush both sides of the bread with 2 tsp olive oil. Toast for 2–3 minutes per side until crisp and deeply golden, then transfer to plates.

3. Cook the spinach:
Add 1 tsp olive oil and the green onion to the skillet. Cook for 1 minute, then add the garlic and cook for 15 seconds. Add the spinach and half the salt and pepper. Cook for 2–3 minutes, tossing often, until wilted and no liquid remains. Transfer to a bowl.

4. Fry the eggs:
Reduce the heat to medium-low and add the remaining 1 tsp olive oil. Crack in the eggs and season with the remaining salt and pepper. Cook for 2 minutes, then cover for 30–60 seconds until the whites are set and the yolks reach your preferred doneness.

5. Assemble the toast:
Spread the feta mixture over each toast. Top with the spinach, fried eggs, and remaining feta. Finish with fresh herbs and crushed red pepper flakes, if desired. Serve immediately.
