Halloween Strawberry Ghosts

Halloween Strawberry Ghosts turn fresh strawberries and white chocolate into a playful no-bake party treat with plenty of Halloween charm.

Halloween Strawberry Ghosts are the kind of little party treat that gets a smile before anyone takes a bite. Juicy red strawberries peek out from smooth white chocolate coats, while tiny dark chocolate faces give every ghost a personality of its own. Some look surprised. Others seem mildly concerned about being dessert.

They’re wonderfully simple to make, too. A quick dip, a little swirl at the base, and a few chocolate dots turn fresh berries into a playful Halloween treat. No baking, special molds, or complicated decorating skills required. The sweet coating pairs beautifully with the berries’ fresh tang, and a tiny pinch of salt keeps each bite nicely balanced.

Serve these chocolate-covered strawberry ghosts on a dessert platter, tuck them onto a Halloween snack board, or make a small batch just for fun. They’re best enjoyed the day they’re made, when the berries are at their freshest.

Recipe Yield: 18 strawberry ghosts (6 servings)

INGREDIENTS

18 medium-large fresh strawberries, green tops intact (about 1 lb)
12 oz good-quality white chocolate melting wafers
2 tbsp semisweet chocolate chips
1/8 tsp fine sea salt

INSTRUCTIONS

1. Prepare the Strawberries:
Gently rinse the strawberries and pat completely dry, including around the leaves. Let them come to room temperature before dipping. Keep the green tops attached. Line a baking sheet with parchment paper.

2. Melt the White Chocolate:
Place white chocolate melting wafers in a deep microwave-safe bowl. Microwave in 20-second intervals, stirring well after each, until almost melted. Stir until completely smooth, then mix in the sea salt.

3. Dip and Shape the Ghosts:
Holding each strawberry by its leaves, dip the lower three-quarters into the white chocolate, leaving a little red showing near the top. Let some excess coating drip off, then place tip-down on the parchment with the leaves facing up. Gently pull each berry slightly along the parchment, leaving a small chocolate tail. Keep the berries upright as the coating begins to set.

4. Set the Coating:
Refrigerate the strawberries for 10–15 minutes, or until the white chocolate is firm enough to decorate.

5. Create the Ghost Faces:
Meanwhile, melt semisweet chocolate chips in a microwave-safe bowl in 15-second intervals, stirring between each, until smooth. Transfer to a small piping bag or zip-top bag and snip a tiny corner. Pipe two small eyes and a mouth onto each strawberry, mixing little smiles, surprised expressions, and playful faces.

6. Chill and Serve:
Refrigerate for another 5–10 minutes until the faces are set. Carefully transfer to a serving platter and enjoy chilled.

Helpful Tips to Perfect This Recipe

  • Keep Strawberries Completely Dry: Even a little moisture can cause chocolate to thicken or slide off the berries. Wash them ahead of time and let them air-dry thoroughly before dipping.
  • Choose the Right Melting Chocolate: Good-quality white melting wafers made for dipping give these strawberry ghosts a smooth, even coating that sets reliably. If the coating thickens while dipping, gently rewarm it in short intervals.
  • Make Them Fresh for the Best Results: These treats are prettiest and tastiest the day they’re prepared. If making ahead, refrigerate in a single layer in a loosely covered container and enjoy within 24 hours. Avoid stacking to protect their little faces.
