Golden Strawberry Buttermilk Corn Cake baked until tender and topped with sweet strawberries, a light dusting of powdered sugar, and cozy homemade charm. A beautiful fruit dessert recipe from FoodForYourGood.com

Soft, buttery, and beautifully golden, Strawberry Buttermilk Corn Cake brings together tender cake, juicy strawberries, and a delicate cornmeal texture in the most comforting way. Moreover, this easy one-bowl dessert feels elegant enough for brunch, yet simple enough for a cozy weekend bake. Fresh strawberries gently roast into the surface as the cake bakes, while a light dusting of powdered sugar creates a bakery-style finish that feels extra special.

Interestingly, cornmeal cakes have roots in rustic American farmhouse kitchens because cornmeal added warmth, texture, and heartiness to simple desserts. However, this version feels brighter and softer thanks to tangy buttermilk and naturally sweet strawberries. As the cake bakes, the berries soften beautifully and create little bursts of flavor in every bite.

Whether served for dessert, brunch, or alongside afternoon coffee, this homemade strawberry cake feels effortlessly special. Additionally, it tastes wonderful on its own or with a dollop of whipped cream or vanilla yogurt.

Recipe Yield: 9 servings

INGREDIENTS

1 cup all-purpose flour
¾ cup fine yellow cornmeal
1 tsp baking powder
½ tsp baking soda
¾ tsp kosher salt (or ½ tsp fine salt)
½ cup unsalted butter, melted and slightly cooled
¾ cup granulated sugar
2 large eggs, room temperature
1½ tsp vanilla extract
¾ cup buttermilk, room temperature
½ tsp lemon zest (optional, but recommended)
1¼ cup fresh strawberries, hulled and halved or sliced
1 Tbsp granulated sugar (for topping)
1–2 Tbsp powdered sugar (for garnish)

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan, then line with parchment paper, leaving a slight overhang for easy removal. Lightly grease the parchment as well to help prevent sticking.

2. Mix dry ingredients:
In a large mixing bowl, whisk together flour, cornmeal, baking powder, baking soda, and salt until evenly combined and lump-free.

3. Mix wet ingredients:
Add melted butter, sugar, eggs, vanilla extract, buttermilk, and lemon zest (if using) directly into the same bowl. Then whisk gently until smooth and fully combined. Avoid overmixing to keep the cake soft and tender.

4. Assemble the cake:
Pour the batter into the prepared pan and smooth the top evenly. If the strawberries seem very juicy, gently pat them dry with paper towels first. Arrange strawberries across the surface, gently pressing them slightly into the batter for a beautiful homemade look. Then sprinkle evenly with 1 Tbsp granulated sugar for a lightly crisp, bakery-style top.

5. Bake the cake:
Bake for 38–44 minutes, or until the top is golden brown and a toothpick inserted near the center comes out with a few moist crumbs but no wet batter. If the top browns too quickly during the final minutes, loosely tent with foil.

6. Cool and finish:
Allow the cake to cool in the pan for 20–30 minutes, as the crumb continues setting while warm. Then dust lightly with powdered sugar before slicing and serving.

Helpful Tips to Perfect This Recipe

  • Use room temperature ingredients: Room temperature eggs and buttermilk blend more smoothly into the batter. As a result, the cake bakes more evenly and develops a softer, bakery-style crumb.
  • Pat strawberries dry if juicy: Fresh strawberries naturally vary in moisture. Therefore, lightly drying them before baking helps prevent excess liquid and keeps the cake beautifully tender.
  • Do not overbake: Cornmeal cakes continue setting after leaving the oven. For the softest texture, remove the cake once a few moist crumbs remain on the toothpick instead of waiting for it to look completely dry.
