1 cup shredded Monterey Jack or cheddar cheese
1 small yellow onion, diced
2 garlic cloves, minced
1 large avocado, diced or lightly mashed
¾ cup pico de gallo, lightly drained
½ cup chunky salsa
2 tbsp water, plus more if needed
1 tbsp tomato paste
2 tsp chili powder
1 tsp ground cumin
½ tsp smoked paprika
½ tsp dried oregano
¼ tsp black pepper
½ cup sour cream
1 tbsp olive oil, divided
1 tsp kosher salt, divided, plus more to taste
1 tbsp fresh lime juice
1–2 tsp water, for thinning
¼ cup chopped fresh cilantro

INSTRUCTIONS
1. Roast the sweet potatoes:
Preheat the oven to 425°F (220°C). Pierce each potato several times with a fork. Rub with 2 tsp olive oil and ¼ tsp salt. Place on a parchment-lined baking sheet and bake for 45–55 minutes, until very tender through the center.
2. Make the lime crema:
Meanwhile, whisk the sour cream, lime juice, ¼ tsp salt, and enough water to create a smooth drizzle. Refrigerate until serving.
3. Brown the beef:
Heat the remaining 1 tsp olive oil in a large skillet over medium-high heat. Add the onion and cook for 3 minutes. Then add the beef and cook for 5–7 minutes, breaking it into small crumbles, until browned and cooked to 160°F (71°C).
4. Season the filling:
Drain excess grease if needed. Add the garlic, tomato paste, chili powder, cumin, smoked paprika, oregano, black pepper, and remaining ½ tsp salt. Cook for 1 minute, stirring constantly.
5. Finish the taco filling:
Stir in the salsa, black beans, and 2 tbsp water. Simmer for 4–5 minutes, stirring occasionally, until thick and scoopable. Add another splash of water only if the mixture becomes dry.
6. Open the sweet potatoes:
Carefully slice each potato lengthwise without cutting completely through. Gently press the ends inward, then fluff the centers with a fork.
7. Fill and melt:
Divide the taco filling among the potatoes and top with cheese. Broil on the baking sheet for 1–2 minutes, watching closely, until the cheese is melted and lightly golden.
8. Add the toppings:
Top each potato with avocado, drained pico de gallo, cilantro, and lime crema. Serve immediately with lime wedges.
