Mushroom Asiago Chicken turns an everyday skillet dinner into something wonderfully special. Golden chicken cutlets simmer in a velvety sauce filled with browned cremini mushrooms, garlic, fresh thyme, and nutty Asiago cheese. Dijon and a touch of lemon brighten the richness, while white wine adds savory depth without overpowering the dish.

Although the results feel restaurant-worthy, the recipe uses familiar ingredients and one skillet. A light flour coating gives the chicken a beautiful golden crust and helps the sauce cling to every bite. Meanwhile, properly browning the mushrooms develops deep flavor before the cream reaches the pan.

Serve this creamy mushroom chicken with mashed potatoes, buttered noodles, rice, or crusty bread. Any of them will happily catch the extra sauce. It is cozy enough for a weeknight yet polished enough for a special dinner.

INGREDIENTS

4 small boneless, skinless chicken breasts, 5 to 6 oz each
12 oz cremini mushrooms, sliced 1/4-inch thick
3/4 cup finely grated Asiago cheese, about 2 1/2 oz
1 medium shallot, finely chopped
3 garlic cloves, minced
1/3 cup all-purpose flour
1 1/4 tsp kosher salt, divided
1/2 tsp garlic powder
1/2 tsp sweet paprika
1/2 tsp freshly ground black pepper
2 tbsp olive oil, divided
2 tbsp unsalted butter, divided
1 tsp finely chopped fresh thyme
1/3 cup dry white wine
3/4 cup low-sodium chicken broth
3/4 cup heavy cream
1 tsp Dijon mustard
1 tsp fresh lemon juice
2 tbsp finely chopped fresh parsley, divided

INSTRUCTIONS

1. Prepare the chicken:
Pat the chicken dry. If needed, gently pound only the thickest areas so each breast is no more than about 3/4 inch thick, while keeping its natural shape.

2. Season and coat:
Season the chicken evenly with 1 tsp salt. Combine the flour, garlic powder, paprika, and black pepper in a shallow dish. Lightly coat each chicken breast, then shake off the excess flour.

3. Sear the chicken:
Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Sear the chicken for 3 to 4 minutes per side, until deeply golden but not necessarily cooked through. Work in batches and add the remaining olive oil if the skillet looks dry. Transfer the chicken to a plate.

4. Brown the mushrooms:
Reduce the heat to medium and add the remaining butter. Spread the mushrooms evenly in the skillet and cook undisturbed for 3 minutes. Then, add the remaining 1/4 tsp salt and cook for 4 to 5 minutes, stirring occasionally, until deeply browned and their liquid has evaporated.

5. Add the aromatics:
Add the shallot and thyme, then cook for 2 minutes, until the shallot begins to soften. Stir in the garlic and cook for 30 seconds.

6. Deglaze the skillet:
Pour in the white wine and scrape up the browned bits from the skillet. Simmer for 2 to 3 minutes, until the wine has reduced by about half.

7. Finish the chicken:
Stir in the chicken broth, heavy cream, and Dijon. Bring the sauce to a gentle simmer and cook for 2 minutes. Return the chicken and any collected juices to the skillet. Reduce the heat to medium-low and gently simmer for 3 to 5 minutes, checking the smallest pieces first, until each breast reaches 165°F.

8. Finish the sauce:
Transfer the chicken to a plate. Remove the skillet from the heat and allow the bubbling to subside. Gradually stir in the Asiago until melted and smooth. Then, stir in the lemon juice and 1 tbsp parsley.

9. Serve:
Return the chicken to the skillet and spoon the mushroom Asiago sauce over the top. Sprinkle with the remaining parsley and serve immediately with mashed potatoes, pasta, rice, or crusty bread.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Use freshly grated Asiago: Cheese grated directly from a block melts more smoothly than packaged shredded cheese, which often contains anti-caking ingredients.
  • Let the mushrooms truly brown: Avoid stirring them during the first few minutes. Their moisture needs time to evaporate before the edges can become deeply golden.
  • Keep the sauce below a boil: Once the cream is added, maintain a gentle simmer. Also, stir in the Asiago away from direct heat to keep the sauce smooth.
  • Replace the wine when needed: Substitute an equal amount of additional chicken broth. Taste after adding the lemon and adjust with another small squeeze only if the sauce needs more brightness.
