2 tbsp extra-virgin olive oil, divided
1/3 cup canned crushed tomatoes
1 tbsp tomato paste
1 garlic clove, finely grated
1 tsp balsamic vinegar
1/2 tsp honey
1/2 tsp dried oregano
1/4 tsp kosher salt
1/4 tsp black pepper
3/4 cup shredded whole-milk low-moisture mozzarella
3 oz fresh mozzarella, well drained and torn into small pieces
1 large Roma tomato, thinly sliced and patted very dry
2 tbsp finely grated Parmesan
1/2 cup loosely packed fresh basil leaves, divided
INSTRUCTIONS
1. Preheat the oven:
Heat the oven to 425°F. Place a rack in the center and set a large sheet pan nearby.
2. Make the tomato sauce:
Stir together the crushed tomatoes, tomato paste, garlic, balsamic vinegar, honey, oregano, salt, and black pepper.
3. Prepare the basil oil:
Finely chop half the basil leaves. Stir them together with 1 tbsp olive oil and set aside.
4. Pre-crisp the flatbreads:
Place the flatbreads directly on the center oven rack. Bake for 3 minutes, then transfer them to the sheet pan.
5. Assemble the pizzas:
Brush the flatbreads lightly with the remaining 1 tbsp olive oil. Spread the tomato sauce evenly over them, leaving a narrow border.
6. Add the toppings:
Sprinkle with the shredded mozzarella. Arrange the tomato and fresh mozzarella evenly over the top, then finish with Parmesan.
7. Bake until golden:
Bake for 7–9 minutes, until the cheese is melted and bubbling and the flatbread edges are crisp and golden.
8. Finish and serve:
Spoon the basil oil lightly over the pizzas. Add the remaining torn basil, rest for 2 minutes, then slice and serve warm.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Remove as much moisture as possible: Drain the fresh mozzarella thoroughly and pat the tomato slices very dry. This is the most important step for a crisp Margherita flatbread.
- Keep the sauce layer thin: Spread the sauce evenly without piling it on. Flatbread cannot support as much sauce as traditional pizza dough without softening.
- Leave space between the toppings: Small open areas allow moisture to evaporate and help the mozzarella melt instead of steaming.
- Watch the final few minutes: Naan thickness varies by brand. Begin checking after 7 minutes and remove the pizzas once the edges are deeply golden.
