INGREDIENTS

1 ½ lb boneless, skinless chicken thighs, cut into 1 ¼-inch pieces
2 large firm-ripe yellow peaches, unpeeled and cut into 1-inch pieces
1 small shallot, finely chopped
3 garlic cloves, minced
1 tsp finely grated fresh ginger
1 (13.5-oz) can unsweetened full-fat coconut milk, well shaken
3 tbsp peach preserves
1 tbsp low-sodium soy sauce
1 tsp Dijon mustard
¾ tsp kosher salt
½ tsp black pepper
1 tsp sweet paprika
½ tsp garlic powder
3 tbsp cornstarch
2 ½ tbsp avocado oil, divided
¼ tsp crushed red pepper flakes
1 tsp finely grated lime zest
1 ½ tbsp fresh lime juice
2 tbsp chopped fresh basil, divided

INSTRUCTIONS

1. Season the chicken:
Pat the chicken dry. Toss it with the salt, black pepper, paprika, and garlic powder. Sprinkle with the cornstarch and toss until lightly coated, letting any loose excess fall away.

2. Brown the chicken:
Heat 1 tbsp oil in a large 12-inch skillet over medium-high heat. Add half the chicken in one layer. Cook for 2–3 minutes per side until deeply golden but not fully cooked. Transfer to a plate. Repeat with another 1 tbsp oil and the remaining chicken.

3. Caramelize the peaches:
Reduce the heat to medium and add the remaining ½ tbsp oil. Add the peaches and cook for 2–3 minutes, turning gently, until lightly caramelized but still firm. Transfer them to the plate with the chicken.

4. Build the sauce:
Add the shallot to the skillet and cook for 2 minutes. Stir in the garlic and ginger, then cook for 30 seconds. Add the coconut milk, peach preserves, soy sauce, Dijon, red pepper flakes, and lime zest. Scrape up the browned bits and whisk until smooth.

5. Reduce the sauce:
Bring the sauce to a gentle simmer. Cook uncovered for 3–4 minutes, stirring occasionally, until slightly reduced and beginning to coat the spoon.

6. Finish the chicken:
Return the chicken and any collected juices to the skillet. Simmer gently for 3–5 minutes, stirring occasionally, until the chicken reaches 165°F and the sauce coats each piece.

7. Add the peaches:
Gently fold in the peaches and cook for 1–2 minutes, just until heated through and tender around the edges. Remove the skillet from the heat, then stir in the lime juice and 1 tbsp basil. Taste and add a small pinch of salt if needed. Garnish with the remaining basil and serve warm.

  • Use peaches that still feel slightly firm: Very soft peaches can dissolve into the coconut sauce. Firm-ripe yellow peaches caramelize well while keeping their fresh flavor and shape.
  • Remove loose cornstarch before searing: A thin coating creates golden edges and helps thicken the sauce. Excess cornstarch can collect in the skillet and become gummy.
