1 lb 90% lean ground beef
1/2 cup whole-milk ricotta cheese

1 tbsp olive oil, divided
3/4 tsp kosher salt, divided

1/2 tsp smoked paprika

INSTRUCTIONS
1. Prepare the zucchini:
Preheat the oven to 425°F and lightly grease a 9×13-inch baking dish. Halve the zucchini lengthwise, then scoop out the centers, leaving sturdy 1/4-inch borders.
2. Pre-bake the boats:
Finely chop 1 cup of the removed zucchini and squeeze out the excess moisture. Brush the boats with 2 tsp olive oil, then season with 1/4 tsp salt and the black pepper. Bake cut-side up for 10 minutes.
3. Cook the beef filling:
Meanwhile, heat the remaining 1 tsp oil in a large skillet over medium-high heat. Cook the onion for 3 minutes. Add the beef and cook for 5–6 minutes, breaking it into small crumbles. Drain excess fat if needed.

Spoon the beef filling into the zucchini boats and top evenly with mozzarella. Combine the panko, melted butter, and remaining Parmesan, then sprinkle over the cheese.
7. Bake until bubbling:
Bake for 15–18 minutes until the zucchini is tender but still holds its shape, the mozzarella is melted, and the topping is lightly golden. For a deeper golden finish, broil for 1–2 minutes only if using a broiler-safe baking dish.
8. Rest and serve:
