4 (½-inch-thick) slices sourdough or seeded artisan bread
2 tbsp extra-virgin olive oil, divided
1½ cups cherry tomatoes, halved
½ tsp kosher salt, divided
¼ tsp freshly ground black pepper, divided
1 tsp balsamic vinegar
½ tsp honey
2 medium ripe avocados
1 tbsp fresh lemon juice
¼ tsp garlic powder
⅓ cup crumbled feta cheese
2 tsp balsamic glaze
1 tbsp finely chopped fresh basil
1 pinch crushed red pepper flakes, optional

INSTRUCTIONS

1. Toast the bread:
Toast the bread until deeply golden and crisp. While warm, lightly brush the top of each slice with 1 tbsp olive oil.

2. Blister the tomatoes:
Heat the remaining 1 tbsp olive oil in a 12-inch skillet over medium-high heat. Arrange the tomatoes cut-side down and cook undisturbed for 2–3 minutes, until browned around the edges.

3. Glaze the tomatoes:
Reduce the heat to medium-low. Season with ¼ tsp salt and ⅛ tsp black pepper. Add the balsamic vinegar and honey, then gently toss for 30–45 seconds, until glossy and lightly softened. Remove from the heat.

4. Prepare the avocado:
Mash the avocados with the lemon juice, garlic powder, remaining ¼ tsp salt, and remaining ⅛ tsp black pepper. Leave a few small pieces for texture.

5. Assemble the toast:
Divide the avocado evenly among the toasted bread. Top with the warm tomatoes and crumbled feta.

6. Finish and serve:
Drizzle with balsamic glaze, then sprinkle with basil and crushed red pepper flakes. Serve immediately.
