Recipe Yield: 4 servings

INGREDIENTS

12 oz spaghetti
2 tbsp olive oil
4 cloves garlic, minced
½ cup red onion, thinly sliced
1 zucchini, sliced into rounds
½ cup sun-dried tomatoes, chopped
1 cup cherry tomatoes, halved
½ cup kalamata olives, pitted
3½ cups vegetable broth
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes
½ tsp dried oregano
¼ tsp dried thyme
½ cup crumbled feta cheese (divided)
2 tbsp fresh parsley, chopped
1 tbsp lemon juice

INSTRUCTIONS

1. Sauté aromatics:
Heat olive oil in a large deep skillet over medium heat. Then add garlic and red onion, cooking for 2–3 minutes until fragrant and slightly softened.

2. Build the base:
Next, add zucchini, sun-dried tomatoes, cherry tomatoes, and olives. Stir well and cook for 3–4 minutes to release flavors.

3. Add pasta and liquid:
Then add spaghetti, vegetable broth, salt, pepper, red pepper flakes, oregano, and thyme. Gently press pasta down so it is mostly submerged.

4. Cook the pasta:
Bring to a boil, then reduce heat to medium-low. Simmer uncovered for 10–12 minutes, stirring occasionally (especially early on to prevent sticking), until pasta is tender and liquid is slightly reduced but still silky.

5. Finish and serve:
Remove from heat, then stir in lemon juice and half of the feta cheese to lightly melt into the sauce. Finally, sprinkle remaining feta and fresh parsley on top before serving.

Helpful Tips to Perfect This Recipe

  • Balance the salt carefully: Because feta and olives already add saltiness, always taste before adjusting seasoning. This ensures the dish stays perfectly balanced rather than overly salty.
  • Use high-quality olive oil: Since this recipe is simple, good olive oil enhances richness and ties all flavors together beautifully. Additionally, it adds that authentic Mediterranean finish.
  • Control the pasta texture: Stir occasionally, yet avoid overcooking. The pasta should remain slightly firm, which keeps the dish from becoming soft while maintaining a perfect bite.
