1/3 cup vegetable broth
2 tbsp pure maple syrup
1 tbsp rice vinegar
1 tbsp cornstarch
2 tsp toasted sesame oil
1 1/2 tbsp freshly grated ginger
1/4 tsp ground black pepper
4 tbsp neutral high-heat oil, divided
2 tbsp water
1 tsp chili-garlic sauce, optional
1 tbsp toasted sesame seeds, for serving
INSTRUCTIONS
1. Prepare the sauce:
Whisk the soy sauce, broth, maple syrup, vinegar, cornstarch, sesame oil, chili-garlic sauce, and black pepper until completely smooth.
2. Brown the eggplant:
Heat 2 tbsp oil in a large wok or deep skillet over medium-high heat. Add the eggplant and cook for 5–6 minutes, stirring occasionally, until browned and tender. Transfer to a plate.
3. Cook the firm vegetables:
Add 1 tbsp oil, then stir-fry the carrots and broccoli for 2 minutes. Add the water, cover, and cook for 1–2 minutes. Uncover and transfer the vegetables to the plate with the eggplant.
4. Cook the remaining vegetables:
Add the remaining 1 tbsp oil. Stir-fry the bell peppers, zucchini, baby corn, and snap peas for 3–4 minutes until lightly browned and crisp-tender.
5. Add the aromatics:
Add the garlic, ginger, and white scallion parts. Stir constantly for 30 seconds until fragrant.
6. Finish the stir fry:
Return the eggplant, carrots, and broccoli to the skillet. Whisk the sauce again, then pour it over the vegetables. Toss for 1–2 minutes until the sauce bubbles, thickens, and evenly coats everything.
7. Garnish and serve:
Remove from the heat. Sprinkle with sesame seeds and the green scallion parts, then serve immediately.
