INGREDIENTS

For the banana bread:
2 cups all-purpose flour, spooned and leveled
1½ cups mashed very ripe bananas, measured after mashing, about 3 large or 4 medium bananas
⅓ cup full-fat sour cream
½ cup unsalted butter, melted and cooled slightly
¾ cup packed light brown sugar
2 large eggs
1½ tsp ground cinnamon
1 tsp baking soda
½ tsp baking powder
½ tsp salt
2 tsp vanilla extract

½ cup all-purpose flour
⅓ cup packed light brown sugar
2 tbsp granulated sugar
1½ tsp ground cinnamon
⅛ tsp salt
4 tbsp unsalted butter, melted and cooled slightly

INSTRUCTIONS

1. Prepare the oven and pan:
Position a rack in the lower third of the oven and preheat to 350°F. Lightly grease a 9×5-inch loaf pan and line it with parchment paper, leaving overhang along the long sides.

2. Make the cinnamon crunch:
Stir together the flour, brown sugar, granulated sugar, cinnamon, and salt. Add the melted butter and mix until moist, craggy crumbs form. Refrigerate while preparing the batter.

3. Combine the dry ingredients:
Whisk the flour, cinnamon, baking soda, baking powder, and salt together in a medium bowl.

4. Mix the wet ingredients:
In a large bowl, whisk the melted butter and brown sugar until combined. Whisk in the eggs, then stir in the mashed bananas, sour cream, and vanilla.

5. Finish the batter:
Fold the dry ingredients into the banana mixture just until no dry flour remains. Avoid overmixing.

6. Assemble the loaf:
Spread the batter evenly in the prepared pan. Break the chilled cinnamon mixture into small and medium clusters, then scatter them evenly over the batter. Press the topping down very lightly.

7. Bake the banana bread:
Bake for 60–70 minutes, until the topping is golden and the center reaches 200–205°F. A toothpick inserted into the center should come out with a few moist crumbs. If the topping browns too quickly, loosely lay parchment paper over the loaf during the final 15–20 minutes.

8. Cool and slice:
Cool the bread in the pan for 15 minutes. Then, lift it onto a wire rack and cool for at least 1 hour before slicing.

  • Measure the mashed banana: Use exactly 1½ cups of mashed banana for a moist, tender loaf. Banana sizes vary, and adding substantially more can leave the center heavy or gummy.
