INSTRUCTIONS
1. Cream the butter and sugar:
Beat the softened butter and 1/2 cup powdered sugar until smooth and creamy, about 2 minutes. Mix in vanilla, almond extract, and food coloring, if using.
2. Make the dough:
Whisk together flour, cornstarch, salt, and cardamom. Gradually mix into the butter mixture just until combined. Fold in the ground and chopped pistachios.
3. Chill the dough:
Cover and refrigerate for 30 minutes, or until the dough feels firm enough to shape without sticking.
4. Shape the cookies:
Preheat oven to 325°F. Line two baking sheets with parchment paper. Scoop 1 tbsp portions, roll into balls, then gently flatten into thick rounds.
5. Bake:
Bake for 14–16 minutes, until the tops look dry and set and the bottoms are just lightly golden. Avoid browning the tops.
6. Coat with sugar:
Cool on the baking sheet for 5 minutes. While still slightly warm, gently roll each cookie in powdered sugar, then transfer to a wire rack.
7. Finish and serve:
Once completely cool, dust or roll the cookies in powdered sugar once more for a soft, snowy finish.
