INGREDIENTS

2 cups old-fashioned oats
2 cups all-purpose flour
3/4 cup light brown sugar
1/2 tsp ground cinnamon
1/2 tsp salt
3/4 cup unsalted butter, melted
3 cups diced ripe mango
1/3 cup granulated sugar
3 tbsp cornstarch
1 1/2 tbsp lemon juice
1 tsp vanilla extract

INSTRUCTIONS

1. Prepare the pan:
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides for easy removal.

2. Make the crumble mixture:
In a large bowl, combine oats, flour, brown sugar, cinnamon, and salt. Pour in melted butter and stir until evenly moistened and crumbly.

3. Form the crust:
Reserve about 1 3/4 cups of the crumble mixture for the topping. Firmly press the remaining mixture into the prepared pan to create an even crust.

4. Prepare the mango filling:
In a medium bowl, gently toss the diced mango with granulated sugar, cornstarch, lemon juice, and vanilla until evenly coated.

5. Assemble the bars:
Spread the mango mixture evenly over the crust. Then scatter the reserved crumble mixture over the top, leaving a few small gaps so the mango filling can peek through.

6. Bake:
Bake for 40–48 minutes, or until the topping is deep golden brown and the mango filling is bubbling around the edges.

7. Cool completely:
Place the pan on a wire rack and cool for 1 hour. Then refrigerate for at least 1 hour to fully set the filling.

8. Slice and serve:
Lift the bars from the pan using the parchment overhang. Cut into 12 bars and serve chilled or at room temperature.
