Fresh Key lime zest perfumes the dough, while a little juice adds brightness without making the cookies overly sharp. Once cooled, each cookie gets a smooth Key lime glaze that sets softly on top.

Cream cheese gives these cookies a tender center and subtle richness that works beautifully with the lime. Meanwhile, cornstarch keeps the crumb delicate rather than cakey. A short chill makes the dough easy to handle and helps the cookies bake up thick and softly rounded.

INGREDIENTS

Cookies:
2 1/3 cups all-purpose flour
1/2 cup unsalted butter, softened
4 oz cream cheese, softened
1 cup granulated sugar
1 tbsp finely grated Key lime zest
1 large egg, room temperature
1 tbsp fresh Key lime juice
1 tsp vanilla extract
1 tbsp cornstarch
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp kosher salt

Key Lime Glaze:
1 1/4 cups powdered sugar
1 1/2–2 tbsp fresh Key lime juice
1/2 tsp vanilla extract
Pinch kosher salt
Finely grated Key lime zest, for finishing

INSTRUCTIONS

1. Prepare the dry ingredients:
Whisk the flour, cornstarch, baking powder, baking soda, and salt together in a medium bowl.

2. Build the lime flavor:
Add the granulated sugar and Key lime zest to a large bowl. Rub them together with your fingertips until the sugar smells fragrant and looks slightly moist.

3. Cream the butter mixture:
Add the butter and cream cheese. Beat until light and creamy, about 2–3 minutes.

4. Finish the dough:
Beat in the egg, Key lime juice, and vanilla until smooth. Gradually mix in the dry ingredients just until no flour streaks remain. Cover and chill for 45 minutes.

5. Shape the cookies:
Meanwhile, heat the oven to 350°F and line two baking sheets with parchment paper. Scoop about 2 tbsp dough per cookie, roll gently, and place 2 inches apart. Lightly flatten the tops.

6. Bake the cookies:
Bake one sheet at a time for 11–13 minutes, until the edges are set and the centers are no longer wet but remain pale and soft. Cool for 5 minutes, then transfer to a wire rack to cool completely.

7. Make the Key lime glaze:
Whisk the powdered sugar, 1 1/2 tbsp Key lime juice, vanilla, and salt until thick and smooth. Add additional lime juice a few drops at a time only as needed for a slowly spreadable glaze.

8. Glaze and finish:
Spoon the glaze over the completely cooled cookies, letting it settle naturally toward the edges. Finish with fresh Key lime zest and let the glaze set before serving.


Helpful Tips to Perfect This Recipe

  • Keep the butter and cream cheese softened, not warm. They should indent easily when pressed but still hold their shape. Overly warm ingredients can make the cookies spread more than intended.
  • Measure the flour lightly. Spoon it into the measuring cup and level it rather than packing it down. Too much flour can turn these tender Key Lime Cookies dense or dry.
  • Watch the centers, not browning. These cookies are meant to remain pale. Remove them once the centers look set and no longer wet; they will continue firming as they cool.
