Bakery-Style Blueberry Crumb Muffins have everything a great muffin should: soft centers, tall golden tops, juicy berries, and plenty of buttery crumb. Sour cream keeps the batter tender, while fresh lemon zest brightens the blueberries without making the muffins taste lemony. The thick batter also helps hold the berries in place, so every bite feels balanced instead of soggy.
These muffins are simple enough for a quiet weekend breakfast, yet polished enough for brunch or a bakery-style treat at home. A quick burst of high heat gives them their beautiful rise, then a lower temperature finishes the centers gently. Serve them slightly warm with coffee, tea, or a little salted butter. The loose crumbs on the plate are part of the experience—and usually the first thing someone reaches for.

Recipe Yield: 12 muffins
INGREDIENTS
For the Crumb Topping:
3/4 cup all-purpose flour, spooned and leveled
1/3 cup packed light brown sugar
2 tbsp granulated sugar
1/2 tsp ground cinnamon
1/4 tsp fine sea salt
4 tbsp unsalted butter, melted
For the Blueberry Muffins:
2 1/4 cups all-purpose flour, spooned and leveled
1 1/2 cups fresh blueberries
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
3/4 cup granulated sugar
2 large eggs, room temperature
1/2 cup unsalted butter, melted and cooled slightly
3/4 cup full-fat sour cream, room temperature
1/4 cup whole milk, room temperature
2 tsp pure vanilla extract
2 tsp finely grated lemon zest
INSTRUCTIONS
1. Prepare the oven:
Position a rack in the center of the oven and preheat to 425°F. Line a standard 12-cup muffin pan with paper liners.
2. Make the crumb topping:
Whisk the flour, brown sugar, granulated sugar, cinnamon, and salt. Stir in the melted butter with a fork until chunky crumbs form. Refrigerate while preparing the batter.
3. Combine the dry ingredients:
Whisk the flour, baking powder, baking soda, and salt in a medium bowl until evenly combined.
4. Mix the wet ingredients:
In a large bowl, whisk the sugar and eggs until smooth. Whisk in the melted butter, followed by the sour cream, milk, vanilla, and lemon zest.
5. Start the batter:
Add the dry ingredients to the wet ingredients. Fold gently until only a few small flour streaks remain.
6. Add the blueberries:
Gently fold in the blueberries with the final few strokes. Stop mixing as soon as the batter comes together. The batter should be thick.
7. Fill the muffin cups:
Divide the batter evenly among the muffin cups, filling each nearly to the top. Break the chilled topping into small clusters and scatter it generously over the batter. Press it on very lightly.
8. Bake the muffins:
Bake for 5 minutes. Without opening the oven, reduce the temperature to 350°F and continue baking for 16–20 minutes.
9. Check for doneness:
The muffins are ready when the tops are golden and spring back lightly. A toothpick inserted through the muffin crumb, away from a blueberry, should come out clean or with a few moist crumbs.
10. Cool and serve:
Cool the muffins in the pan for 5 minutes. Then transfer them to a wire rack and let them cool for at least 10 minutes before serving.
HELPFUL TIPS TO PERFECT THIS RECIPE
- Measure the flour carefully: Spoon the flour into the measuring cup and level the top. Scooping directly from the container can add too much flour and produce dry muffins.
- Keep the crumb topping chunky: Stir only until uneven clusters form. Fine, overmixed crumbs can melt into the surface instead of creating a bakery-style topping.
- Do not overmix the batter: Fold only until the flour disappears. A few small lumps are completely normal and help keep blueberry muffins soft and tender.
- Use frozen berries straight from the freezer: Do not thaw them first. Fold them in briefly to limit streaking, then allow an additional 2–3 minutes of baking time when needed.
- Store for the best texture: Keep cooled muffins loosely covered at room temperature for up to two days. For longer storage, freeze. Thaw at room temperature, then warm at 300°F for 5–8 minutes to refresh the crumb topping.
