They taste like a weekend treat, yet the batter comes together with simple pantry ingredients.

The secret is blooming the cocoa with hot coffee or hot water before it goes into the batter. This helps the chocolate flavor taste deeper and smoother. However, the pancakes do not taste like coffee. They just taste richer. Buttermilk keeps them tender, while mini chocolate chips add soft melted pockets throughout. INGREDIENTS

For the chocolate pancakes:
1 cup all-purpose flour, spooned and leveled
1/3 cup Dutch-process cocoa powder
1/4 cup very hot coffee or very hot water
1 cup buttermilk, room temperature
2 large eggs, room temperature
3 tbsp unsalted butter, melted and slightly cooled
1/4 cup packed light brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
1 tsp vanilla extract
1/2 cup mini semisweet chocolate chips
1–2 tbsp neutral oil, for cooking

For the chocolate sauce:
1/2 cup semisweet chocolate chips
1/3 cup heavy cream
1 tbsp maple syrup
1 tsp unsalted butter
1/4 tsp vanilla extract
1 pinch fine sea salt

INSTRUCTIONS

1. Bloom the cocoa:
In a large bowl, whisk the cocoa powder with the very hot coffee or water until smooth. Then, whisk in the brown sugar, buttermilk, eggs, melted butter, and vanilla.

2. Add the dry ingredients:
In a separate bowl, whisk the flour, baking powder, baking soda, and salt. Add to the chocolate mixture and gently whisk just until combined.

3. Rest the batter:
Fold in the mini chocolate chips, then let the batter rest for 8 minutes. The batter should be thick but scoopable.

4. Cook the pancakes:
Heat a large skillet or griddle over medium-low heat and lightly brush with oil. Scoop 1/4 cup batter per pancake and cook for 2–3 minutes, until the edges look set and the tops look slightly puffed.

5. Flip and finish:
Flip carefully and cook for 1–2 minutes more, until cooked through. Adjust the heat as needed so the pancakes stay tender and do not brown too quickly.

6. Make the chocolate sauce:
Add the chocolate chips, heavy cream, maple syrup, butter, and salt to a microwave-safe bowl. Microwave in 15-second bursts, stirring between each, until smooth and glossy. Stir in the vanilla.

7. Serve warm:
Stack the pancakes while warm, then drizzle with the chocolate sauce. Serve right away while the sauce is glossy and pourable.


HELPFUL TIPS TO PERFECT THIS RECIPE

  • Bloom the cocoa for deeper chocolate flavor. Mixing cocoa with very hot coffee or water first helps the pancakes taste richer, smoother, and more chocolate-forward without adding extra sugar.
  • Keep the heat medium-low. Chocolate pancakes darken faster than classic pancakes. Therefore, slightly lower heat gives the centers time to cook while keeping the texture soft and fluffy.
  • Do not overmix the batter. A few small lumps are perfect. Overmixing can make the pancakes dense instead of tender and cake-like.
  • Let the batter rest before cooking. Those 8 minutes help the flour hydrate and the cocoa soften, so the pancakes rise better on the griddle.
