Recipe Yield: 4 servings

INGREDIENTS

1 lb turkey breasts (boneless)
1 cup fresh cranberries
½ cup orange juice (freshly squeezed)
2 tbsp orange zest
¼ cup honey
2 tbsp brown sugar
1 tbsp Dijon mustard
¼ cup chicken broth
1 tbsp butter
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
½ tsp garlic powder

INSTRUCTIONS

1. Season and sear:
Pat the turkey breasts dry. Season both sides with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear turkey 3–4 minutes per side until lightly golden.

2. Build the glaze:
Add fresh cranberries, orange juice, orange zest, honey, brown sugar, Dijon mustard, butter, thyme, garlic powder, and chicken broth to the skillet. Stir to combine and allow cranberries to begin softening.

3. Simmer gently:
Reduce heat to medium-low. Cover and simmer 15 minutes, allowing cranberries to burst and form a thick, glossy glaze around the turkey.

4. Reduce and coat:
Remove the lid and simmer 5–7 more minutes, stirring occasionally, until the glaze reduces and becomes syrupy. Spoon the glaze over the turkey repeatedly to coat evenly. Continue cooking until the turkey reaches 165°F in the thickest part.

5. Rest and serve:
Remove turkey breasts from heat and let rest 5 minutes before slicing. Spoon extra cranberry-orange glaze over the top before serving.

Helpful Tips to Perfect This Recipe

  • Balance the Citrus Brightness:
Although cranberries are naturally tart, adding fresh orange zest enhances their flavor beautifully. As a result, the glaze becomes vibrant, balanced, and ideal for holiday meals.
  • Create a Glossy Glaze:
When the cranberries burst, stir frequently to ensure the sugars melt evenly. This approach guarantees a thick, luxurious glaze that clings to the turkey perfectly.
  • Keep the Turkey Juicy:
Since turkey breasts can dry quickly, keep your heat medium-low while simmering. Moreover, covering the skillet allows steam to keep the meat tender and succulent.
