INGREDIENTS

1 1/2 lb boneless skinless chicken breasts, cut into 1 1/2-inch pieces
1 (14 oz) can quartered artichoke hearts in water, rinsed, drained, and patted dry
1/3 cup roasted red peppers, drained, patted dry, and chopped
5 oz baby spinach, roughly chopped
4 oz full-fat cream cheese, softened
1/2 cup full-fat sour cream
1/2 cup finely grated Parmesan cheese
1 cup shredded mozzarella cheese, divided
1 tbsp olive oil
1 tsp kosher salt, divided
1/2 tsp black pepper
1 tsp Italian seasoning
2 garlic cloves, finely minced
1 tbsp fresh lemon juice
1 tsp Dijon mustard
1/4 tsp crushed red pepper flakes
2 tbsp chopped fresh basil

INSTRUCTIONS

1. Prepare the oven:
Preheat oven to 400°F. Lightly grease a 9×13-inch baking dish.

2. Season the chicken:
Pat chicken dry, then toss with 3/4 tsp salt, black pepper, and Italian seasoning.

3. Sear the chicken:
Heat olive oil in a large skillet over medium-high heat. Add chicken in an even layer and cook for about 3 minutes, turning once, until lightly browned but still undercooked inside. Transfer to the baking dish.

4. Wilt the spinach:
Add spinach to the same skillet and cook for 1–2 minutes, stirring until just wilted. Remove from heat.

5. Make the spinach artichoke mixture:
Stir cream cheese and sour cream until smooth. Then stir in Parmesan, 1/2 cup mozzarella, garlic, lemon juice, Dijon, remaining 1/4 tsp salt, and red pepper flakes. Fold in wilted spinach, artichokes, and roasted red peppers.

6. Assemble the bake:
Spoon the spinach artichoke mixture over and around the chicken. Gently distribute everything into an even layer, then sprinkle with remaining 1/2 cup mozzarella.

7. Bake until bubbly:
Bake uncovered for 15–18 minutes, or until bubbling around the edges and the chicken reaches 165°F in the thickest pieces.

8. Finish and serve:
If desired, broil for 1–2 minutes until lightly golden. Let rest for 5 minutes, then sprinkle with fresh basil and serve warm.
