Add the coconut to a small dry skillet over medium-low heat. Stir constantly for 2 to 3 minutes, until lightly golden. Immediately transfer it to a plate.
2. Blend the cottage cheese mixture:
Add the cottage cheese, egg yolk, sugar, melted butter, vanilla, and coconut extract to a small blender cup. Blend for 20 to 30 seconds, until completely smooth.
3. Finish the batter:
Stir the flour, baking powder, and salt into the blended mixture just until no dry streaks remain. Fold in 1 tbsp toasted coconut. Lightly grease a wide 12-oz microwave-safe mug, then spoon in the batter and smooth the top.
4. Microwave the cake:
Microwave on high for 60 seconds. Continue cooking in 5- to 10-second intervals until the center is fully set, no wet batter remains, and a toothpick comes out with a few moist crumbs, usually 70 to 90 seconds total.
