INGREDIENTS
1½ cups fresh strawberries, hulled and sliced
1½ cups fresh blueberries
¾ cup fresh raspberries
8 oz cream cheese, softened
¾ cup plain Greek yogurt
1 cup whipped topping or stabilized whipped cream
3 Tbsp honey
2 Tbsp powdered sugar
1 tsp vanilla extract
1 tsp fresh lemon juice
4–6 vanilla wafer cookies, lightly crushed (optional)
Fresh mint leaves, for garnish (optional)
INSTRUCTIONS
1. Prepare the berries:
Wash and dry the berries very well. Slice the strawberries and set aside.
2. Make the cream filling:
In a medium bowl, beat the softened cream cheese until completely smooth. Then add the Greek yogurt, honey, powdered sugar, vanilla extract, and lemon juice. Beat again until creamy and well combined. Gently fold in the whipped topping until soft, fluffy, and fully incorporated.
3. Layer the parfaits:
Spoon a small layer of cream into the bottom of 4 clear serving glasses. Add a layer of blueberries, followed by another layer of cream and raspberries. Add more cream, then finish with sliced strawberries on top. If using, lightly sprinkle crushed vanilla wafers between layers for a subtle cheesecake-style texture.
4. Chill and serve:
Refrigerate for 20–30 minutes before serving so the layers settle and flavors blend together. Garnish with fresh mint if desired and serve chilled.
